Vegetarian help please!!

Have been a pescatarian for this past 6 months but have decided to fuck fish off all together now and just become veggie. I’m in need of some help with recipes. They also need to be dairy free.
We work long hours so needs to be either slow cooker friendly, or quick and easy! We hate stew.

Just to be mega awkward.
Please help as I’m going food shopping in an hour(ish).

Sainsbury’s have recently really expanded their veggie ready meals range; some more unusual dishes now. Waitrose has a very good selection, as does Marks if you don’t mind paying a bit more.

Reporting back on the satay tofu burgers that I linked above - I made it tonight. It was bloody lovely!

Really easy to make and I hate cooking anything that's a faff.

Marinaded slabs of tofu in honey and soy sauce. I fried them with red onions. Made satay sauce from peanut butter & sweet chilli sauce, spread that on top of the tofu 'burgers' and served in a bun with spinach and rocket leaves.

I thoroughly enjoyed it - and I made double so I get to eat it again tomorrow!

Have a vegan DD and she loves fajitas-I substitute chick peas for meat, green lentil bolognaise, coconut milk based curries and bean and red.green pepper chilli. would find it harder to think of fish recipes to be honest!

Frys brand is dairy free and vegan. Morrisons stock it.

Satay noodle - shred veg - Cartier, courgettes, red pepper, spring onion
Cook noodles
Fry up together in a wok
Make satay sauce - peanut butter, chilli sauce, coconut milk, lime juice
Mix it all up

This Currried rice and lentils is lovely
