They're fine. Just remove the sprouty bits and use as normal.

They’ll be fine. Chop off any growth or green bits and don’t show them the before picture.

The spuds I’m just about to take out of the oven looked very similar when I threw ‘em in.... I have had to re-open the kitchen now it’s a lot cooler and people are expecting real food!

I would just cut the sprouting bits off and use.

Yep just cut the sprouty bits and any green bits off and use as normal. We've done that loads of times and we're all still here.

They won't make you I'll but I think they taste a bit weird once they have started sprouting a lot.

Just de-eye then and they're fine 🙂 it's what a lot of commercial kitchens do, although maybe not with that many

Make sure they aren’t green and chop of the sprouts.

I'd go by how soft they are. If firm I'd eat them, if they're spongy I wouldn't. (As well as chopping out any green)

Make sure to remove any green areas as well as the sprouts as these will have a high concentration of glycoalkaloids which are toxic.

Aren't spuds from the 'Deadly Nightshade' family? and poison you if you eat them when they're a bit manky? Smile
I had to feed a family of 5 during the 1976 drought when potatoes were £1 a pound so we never turned down anything spud wise.Blush
We're all still alive.
