AIBU to wonder what on earth to cook for dinner in this heat?

Am really running out of ideas of what to have for supper. I have done the salad/quiche/barbecue thing to it's limit over the last month. Just run out of ideas and wondering if I am the only one who's supposed to come up with what's for dinner? AIBU to just make sandwiches?

I'm just cooking my normal stuff. We had shoulder of lamb on a bed of sliced potatoes tonight.

I don’t get the change in meals because of the weather. I used to live in the West Indies and ate curries/pasta/stew most nights.

What about tacos/fresh fish/souvlakis

I did a beef stew today and it was waaaay too hot.

We had jacket potatoes tonight, I made a light chilli to go with it.

Other ideas:
Omelette & salad
Roasted chicken, potato salad & salad
Salmon & new potatoes
Pasta
Buffet (meats, breads, cheese board etc)
Fajitas
Light tray bakes

In answer to your question, no you ANBU, my son asked for a cheese toastie and he was happy with that yesterday, and my DH and I shared a Camembert with toast dipped in. Yum.

In my case having the grill or oven on makes the kichen unbearably hot. I very rarely do roasts and casseroles anyway. We tend to eat more quick stove top meals.

I am cooking what I normally cook. Maybe avoid things that take a long time in the oven and more on stove stuff but other than that I not sure why it would be any different. But if you just want sandwiches and fruit then just have that. There are no rules!

Thanks for all your replies. I think I'm just too hot and bothered [and a tiny bit lazy!] to bother with full on gravy dinners. Really like some of your ideas so will implement them over the coming week. Special thanks @castleonacloud for the ready made meal plan!

Smoked salmon on brown bread with side salad.
Avocado on toasted bagel with squirt of lime.

Our go to for hot days.
I definitely wouldnt cook. We all need a change.

We eat a lot of salads in the summer.

a) The salad ingredients are plentiful and in season
b) It's too hot too spend a lot of time cooking
c) We don't fancy heavy, stodgy meals in hot weather
d) We love salad

Ah, thank you @glueandstick. We love quiche so I've been making it at least once a week. The only problem is DH - who HAS TO HAVE MEAT as it's not dinner if there is no meat. Never mind, I just give him some ham or chicken alongside the quiche. Actually, I've just realised that we haven't had pizza for ages so will add that to the list for a change.

Normal stuff meat wise but summery accompaniments like couscous/salad potatoes, asparagus, baby corn, pasta salad/bean salads
Roast a chicken and serve baguette coleslaw etc and coronation chicken next day

Ooo egg and bacon quiche!
We’ve been having kebabs (Nando’s peri peri marinade) with salad and pitta.
Also giant prawn and avocado salad.
Also ham egg and salad (ham in slow cooker so as not to turn oven on!
Also chicken and bacon balsamic salad.

In the hot weather we (me and dh) tend not to want to eat too much, but want something, and I’ve got two little ones that I still need to cook/feed otherwise I’d probably just live on beans on toast/other variant on toastGrin

Shop bought tortillas. Fill each one down the middle with bag salad, chopped tomatoes, thinly sliced cucumber and red pepper slices. Top with lime mayonnaise (squeeze and zest a lime into 1/4 jar of shop bought maynaise). Add a protein top - avocado slices, or ready roast chicken slices or flaked salmon. Sometimes I put the kids chicken nuggets in (grill and slixw two length ways). Drizzle a little more lime mayonnaise on top. Two per person is plenty for dinner.

I roasted a chicken last night. We had it with roasted cherry tomatoes and corn on the cob. There will also be enough left for the DC's lunch today.

We had roast chicken on Sunday and the leftovers have given us a Waldorf salad and a Coronation chicken salad. Fish of the day tonight as we are going up to the coast and salade niçoise tomorrow as 34° forecast.

The beauty of the roast lamb shoulder on sliced potatoes is that you literally bung it in the oven and leave for an hour and a bit. Then all you need is green beans and job done. So no hanging around in a hot kitchen.
