Do you eat the roe on scallops??

I’m out for dinner with 2 friends who happen to both be chefs. I ordered scallops, they’ve arrived with the roe on. I’m happy with that, I always eat it. Chef A is disgusted, says he’s never worked in a restaurant in his 20 years as a chef and served scallops with the roe on. Chef B is outraged with Chef A, says in his 15 years as a chef he has never worked in a restaurant that HASNT serves scallops with the roe on. Queue lots of arguing while I eat my scallops, roe and all.

What do you do? If you take it off, why?

Scallop roe is one of the most disgusting things I’ve ever had the displeasure of putting in my mouth so I’d say off

I’m a pescatarian so eat a lot of fish. Got eel tomorrow for tea (unagi donburi) yum!

Roe is the best bit but needs minimal cooking.

If chef A has never served the roe at all, attached or not, then he's a pretty rubbish chef.

Just read back some of the posts - roe and coral are the same thing. I always call it "coral" Grin

I'd eat the whole thing, roe and all, and have done so countless times.
Like you I hate it when just four or five scallops are given as a serving.

My favourite way to have them is wrapped in bacon and grilled.

I'm glad I don't eat at Chef A's restaurant, it's often the cheap & cheerful frozen scallops that come without a roe.

The coral is the tastiest part, just as the brown meat is in crab.
When I lived in the US, it was most disappointing that they only ever served the white meat of both.

Seaside inhabitant here - if I go out and have scallops then they rarely have the roe on, however if we are doing them on the BBQ then they will have the roe on. Cost too much to waste any of it!!!!

I just couldn't eat the whole thing. My ex husband would turn in his grave. He trained in Paris under a world famous chef so I assume they knew what they were talking about Grin

A very nice thing to do with the separate roe is pound it and use as the base of a sauce to serve with fillet of sole or turbot.

Absolutely.

Love it, sear the scallops, take out of the pan, swirl some butter until it browns, scallops and roe back in pan, lemon juice, salt, pepper and lemon zest in, swirl it all.

Wasting the roe is criminal.

I grew up in a seaside town and DF worked in the fishing industry. I have eaten the roe on scallops, herring and have also eaten cod roe boiled and then fried (was not keen on the cod roe to be honest)
Love scallops roe and all. We cook them on the BB

That's funny because I swear I always get served the roe! I just assumed when they didn't have it it was because the scallops didn't have roe on them? I tend to get them in little seaside places in Scotland which are always better than any restaurant does them afaic.

I always eat the roe, you never get enough scallop and roe just increase my time of scallop on my plate so I'm happy.

It does seem like a huge waste to take them off. Fuck sake I have the scallop horn now and am going to be eating them all week.

I have has it served in (fairly posh) restaurants with the coral both on and off. There isn’t a right or a wrong these days but I don’t think they eat the coral in the US. Not sure why. As long as the digestive tract is taken out before both parts are cooked there is nothing to be wary of.

I once had the roe cooked and puréed with curry style spices. The scallops were served on top, it was delicious.
