Chicken Olives

Posting here for traffic, so I bought some chicken olives from the local butchers today and googled how long to cook them for but nothing has come up with the specific name chicken olive.

So aibu to ask if you've heard of a chicken olive - it's a chicken (thigh meat I think) wrapped and netted around stuffing (sausage meat stuffing in my local butchers). All the butchers near me sell them (there are 5 that I can think of within a 2 mile radius of my house) is it a Northern Ireland thing or do butchers elsewhere sell chicken olives?

And also if anyone knows why they're called chicken olives that would be great because there are no actual olives involved Grin

Only ever had beef olives. They were delicious. But made at home rather than by a butcher so not sure if butchers sell them here. Not heard of chicken ones but sound good.

They're called olives because the resulting parcel is olive shaped.

Beef olives similarly contain no actual olives and are named for their shape. But they're the only Ines I've cooked, so I can't help with the timings for chicken

I would cook that at about gas 5 for thirty five minutes. I would check if it was looking dried out or frazzled at thirty minutes.

Should be fine.

I’ve heard of beef olives, which are similar. My mum used to buy them in the early 90s, weirdly I was thinking about them the other day having forgotten them completely!
I’m from the north of Scotland, so it’s not purely an NI thing.

I've never heard of them, but I'd think you need to make sure the sausage is cooked through. I'd stick my meat thermometer in the center and just cook until it says the sausage is done. Or ask the butcher.

Chicken olives sounds a bit Oryx and Crake but the explanation sounds yummy. I would likely wrap into foil parcel and bake for maybe 45 mins?

Waitrose do these but call them stuffed chicken thighs. Sausage meat and breadcrumbs with herbs wrapped in a boned thigh. Theyre very tasty and 25 - 35 mins depending on oven. Have a look at 20 mins and judge how much more they'll need. Take them out when skin is as roast chicken should be.enjoy.

Thank you 😊, we have beef ones here but I've never heard of them being called beef olives, we call them stuffed steaks.

Thanks for cooking tips too, I have a fan assisted oven so put it on at 180 for 45 mins! Will check before then and obvs check the internal temp for the stuffing!

Beef olives is a thing here too in Scotland.

I would normally braise them- they work well in a slow cooker, and the sauce makes a delicious gravy.
I would be tempted to cook the chicken olives the same way- it would keep the chicken moist-the liquid or stock ( I'd chuck in in a few vegetables too onions, carrots celery) would make a delicious gravy.
Perfect with a dollop of mash.

My MIL makes amazing beef olives! Slow cooker is deifnitely the way to go with them! I’d imagine it would help to keep chicken nice and moist too.

Never heard of that no!

But I cook chicken thighs for 25-30 mins oven or 15 mins skillet. So add another 5 mins for the stuffing mass I guess

Never heard of these but they sound tasty...I would sear them in a pan to seal and roast for at 190 until centre is 75+ if you have a temp probe. (Good sized chicken supremes take 18-20 mins as a rough guide)

They sound amazing but do check the sausage meat is fully cooked, food poisoning would be a high risk with it stuffed inside other meat.

You could always ask your butcher for advice.

Love beef olives but never heard of chicken ones.

I haven't had beef olives for ages. Never heard of chicken olive but fancy trying them. Might get DH to see if he can knock some up.

I normally cook chicken olives (breast stuffed with haggis or black pudding) for 35 minutes at 180 degrees. My oven is fan assisted so they may take slightly longer if the oven isn't fan assisted. I serve them with whisky or peppercorn sauce. I cook beef olives in the slow cooker with onion gravy.
