To ask you for your vegi BBQ ideas?

Have friends coming for the bank holiday and weather looking fab so hoping to have a BBQ but need some inspiration for vegi guests (separate grill and coals from the meat eaters!) I'm good on salads, but what can I slap on the coals that will be tasty and shows a bit of effort?

Just to warn you though - if you do halloumi most of the non meat-eaters will want it too so make sure you have loads of it so the veggies don't miss out! This has happened to me (a veggie) before... No halloumi left for me!!

Tesco does a chilli haloumi - it's divine!

As a veggie who hates fake meat substitutes, I'd say:

Haloumi skewers with mushrooms, peppers and onions on the BBQ
Jacket potatoes (if you're doing them)
Sweet corn (ditto)
Nice veggie burgers or sausages (the ones that are happy to taste like vegetables, not pretend burgers!)
Salads (e.g. rice with feta, red peppers, red onions tossed in chilli mayonnaise; pasta, strong cheddar, peppers, onions tossed in cracked black pepper mayonnaise; Caesar salad; etc)
Garlic bread

Lots of options :)

I knew I should have started this thread AFTER supper Grin have a burning desire to source Hallomi cheese now! I can see this is the future!!

Chargrilled aubergine, peppers, mushrooms, tomatoes, corgette and butternut squash. Par boil and baste in olive oil, oregano and garlic. Finish off in foil tray on the bbq. I throw in swede, sprouts and parsnip sometimes too!

Halloumi kebabs with pesto - sooo good!

Sweet potato and black bean burgers

Veggie kebabs

Portobello mushroom burgers (if they like mushrooms!)

Asda has the best own brand veggie options, found in the freezer section. The bean and nacho burgers are particularly delicious.

Can I recommend putting a bit of mozzarella plus some grated cheddar on the large mushrooms? So delicious that my carnivorous DH and DS always want one so I have to make several.

Now I'm going to sound way out there... But there's a beetroot burger that they sell in waitrose that is really nice. It doesn't taste overly beetrooty and toy might need to brush it in oil (it's very low fat).

Put a layer of foil under the halloumi. Easier.

I’d make skewers with big chunks of halloumi, peppers, plum tomatoes, red onion or those salad onions that are sort of bulbous, pineapple and maybe mushrooms or courgette. Basted in some delicious lemony herby marinade.

A family member is a vegeterian and he likes to slice courgettes into long slices, then brushing it with oil and sprinkling it, quite liberally, with garlic. Then the whole thing goes on the grill.

I'm not going to repeat what's been said there's some great suggestions, I was just going to add that Halloumi is considerably cheaper in Aldi and Lidl than even Asda (you might need a bit as everyone will want some) and it's great quality, leave it plain , skewer with veggies, marinade in herbs and chilli oil. Mmm you won't look back OP!

These are delicious www.jamieoliver.com/recipes/vegetables-recipes/chargrilled-veg-kebabs/ I do them for bbq even if no vegetarians are coming. Everybody has loved them!

Another thing I do is caramelized onions, in a roasting tin put sliced onions. Drizzle olive oil, balsamic vinegar, maple syrup and a little brown sugar. Place the whole tin on the bbq and cook until tender and delicious (my bbq has a lid I put down, but I think it would work with foil over the top just as well). Do lots because they're lovely in a burger or hot dog too.

If you can get corn on the cob with the green leaves still on, then put the whole thing on the grill - the corn sort of steams inside the leaves, and you get a lovely flavour.

I usually buy a disposable BBQ for the veggie stuff, they're only about £3 and it's easy then to keep them separate.

Haloumi is the best. I predict many tasty dinners in your immediate future, OP!

We love Indian Paneer cheese skewers. It's a lovely creamy texture, and I cut it into cubes the day before and pop in a ziplock bag with some greek yogurt, lemon juice and tikka seasoning/paste then leave overnight in the fridge. Then pop onto skewers with chunky onion and peppers, then BBQ.

Slice aubergines , brush with garlicky I oil, delicious grilled. Goes well with halloumi, or squeaky cheese as we call it!

Mushroom kebabs are lovely. Push equal sized button mushrooms and slices of onion alternating on a stick. Mix plain yogurt with curry powder then cover the kebabs and leave for a while before cooking

I'm having a semi veg BBQ too.
We'll be having:
Portobello Mushrooms with veggie pesto
Courgette and aubergine sliced lengthwise , brushed with oil and chilli flakes
Slices of halloumi
Sweetcorn

I don't really like veggie kebabs, as the chunks of veg tend to shrivel up and get burned. And I find halloumi easily falls off the skewers.
