In needing things to do with eggs?????

Posting here for traffic.

We have chickens. All great. Except last year when I did the yearly chicken order I was a bit tipsy and we now have 20 chickens. We're getting 20 eggs a day!!

Give me some egg heavy recipes please people!

Been making lots of quiches, egg salad and giving them away but it seems to daft to give them away when we pay a sodding fortune for organic food and spend so much time taking care of them.

Seriously, could you barter them with friends and neighbours? I'd happily swap some homemade bread or a jar of homemade jam for some really fresh eggs. Or sell them at schoolgate/after church or somesuch?

Also hard boiled eggs make a great snack and stop you eating rubbish cause the protein fills you up - have a constant supply in the fridge.

You can freeze egg whites, and also the yolks though yolks need to be beaten with either a little salt or sugar to stop them going funny.
Then you'll have eggs all winter too.

Or barter them with others - we get lovely veg from other people in return for eggs

You can freeze raw eggs. I dont think they lay all year do they?

Most vegetables can be mashed and combined with herbs spices and egg to make a sort of cake or patty, which is delicious topped with an egg - fried, poached or soft boiled.

Both use 6 eggs and very nice! Found those recipes when we had chickens lol...
Also used to make a lot of cake and take it into work, and gave away lots of eggs to family and friends

Scotch eggs are surprisingly easy to make and homemade ones are way tastier than shop bought.

Could you sell them? Even if you just did an honesty box outside the house?

Otherwise, frittata, meringues, hollandaise sauce. I crack eggs into mashed potato.

Yes, either give them away or preserve them for when they stop laying in winter. I've pickled egg gluts before and with decent vinegar and spices, they were actually nice.

You can also preserve uncooked eggs in isinglass - I've tried this and it does work, but you need to make sure that your seal is good.

Otherwise, pasta carbonara!

Mayonnaise
Hollandaise
French toast
Huevos Rancheros gets rid of up to three per person and makes a hearty meal.
Omelettes (heavy ones like Spanish tortilla) freeze surprisingly well.
Fried, boiled poached (then into benedict or Florentine), scrambled, coddled etc etc.
