What small things do you do to make your cooking healthier?

I've posted on aibu because I figure at one time or another we've all tried to tweak our cooking to make it healthier.

I guess aibu to ask you to share your tweaks?!!

Mine are...

When cooking rice I put in a handful of lentils.

Oil spray for frying and roasting.

Grill for sausages, try to replace real sausages with vegetarian ones.

Cut the fat off meat.

Any others I'm missing out on?

Echo the no fry-light. It saddens me how coconut/rapeseed oil is so good for you, yet people will use a spray oil full of shit to save what...30 calories? A teaspoon of rapeseed oil is 40 calories! So many people are mind fucked to think low fat means better, when low fat is actually full of shit. It's called essential fat as it's essential, innit.

Also just shove loads of veg in absolutely everything. Yum, veggies.
