Bubble & Squeak dispute - I'm right, surely?

Friend popped round Monday, and as I was clattering about the kitchen she asked, as you do, what I was planning to cook for tea. As we'd had a roast on the Sunday, I explained that I was doing cold meat & a couple of sausages to pad it out (as there were about two slices of pork left), mashed potatoes and bubble and squeak. She then observed me chopping up left over veg/roast potatoes/stuffing/an onion and putting this into a frying pan, at which point she asked me what the devil I thought I was doing...

Apparently, Bubble and Squeak is not a fried off mix of the leftovers but should be a stew, made up with left over gravy/beef stock.

AIBU? She's wrong, surely - I've never heard of B&S being a stew!!

It's just left over potatoes and veg, mashed up and fried until it's just about black on both sides. Serve with cold cuts. If your cold cut is gammon, a fried or poached egg is compulsory.

Could your friend be mixing it up with scouse?
I love bubble (ex cafe owner). I always have it if I have a cafe breakfast. But once I went to a cafe I hadn't been to before. My bubble had pie crust in it. I thought I was going to vomit as it made me think they'd scraped the leftovers from people's plates and fried that up. Hmm

And that cafe story is horrific Shock - you have to hope they made up pastry specially but logically you know it's unlikely. You didn't eat it did you??

Def not a northern thing leftovers all squished in to mash potatoes and fried off in burger size bits. We do sometimes make a stew thing of left overs and call it panadilty ( and I have no idea why).

Or cabbage at a push, but non of these other odds and sods.

Your friend is bonkers - of course it isn't a stew, nor does it contain an egg nor cheese nor gravy nor made into patties. It's mashed up potato with ideally sprouts or cabbage, put in a pile in the frying pan to get crispy, turned over for more crispiness and onto plate - food of the gods. Boxing Day bubble is the meal of the year and I always cook more potatoes and veg when doing a roast. Yum Smile

You are so right that I cannot fathom anyone thinking you can make a stew out of the veg. That's just a thick soup.

Fried up left-over veg, which IMO must have potato, carrots, and at least one member (hopefully more) of the brassica family. Fried with onion and garlic and served with a fried egg or two on top, and baked beans.

One year I did shed-loads of veg for Xmas dinner, as my boxing day diet is
Breakfast: left over trifle
Lunch: Bubble and squeak
Dinner: Cold cuts and pickles with a jacket potato.

Bastard in-laws were aghast at the volume of vegetables I cooked up, complained that even with bubble&squeak I'd done way too much, and then ate every single bit. I was peeling and boiling more sprouts etc on Christmas evening.

they will not be coming back...

My Dad would let it almost burn, get a lovely crust on them mix that in. And repeat. Take him 40 minutes to make. Super amazing with pulled cock in.
