To ask what you do with pesto?!

I'm new to pesto and I need to know what to do with it please!

1 tablespoon pesto to 2 tablespoon natural yoghurt mixed with baby potatoes to make a healthy potato salad. Serve with chopped chives and spring onion on top.

Fry onions and a pepper (any colour), add a tin of tuna, green pesto and then creme fraiche at the end. Stir through pasta

Spread pesto liberally on inside of seasoned chicken thigh fillets, stuff fillets with slices of chorizo. Dip fillets in flour, egg, panko breadcrumbs. Bake in oven 25 minutes. Kind of a take on chicken kiev.

Swirl it into minestrone soup - better with 'bean' type than 'pasta' type IYSWIM.
Easy pasta dinner.
Use to make a "tear & share" type bread, if you're into baking.
Add to cold leftover pasta & any protein / veg, good lunch for work or school.

Sounds strange, but it is amazing with eggs. I discovered it after making this:

And now I quite often stir a spoonful into scrambled eggs or an omelette, maybe with some feta or mozzarella.

If you make a simple bread dough, you can make scrolls that are ridiculously good. Roll the dough out flat, spread the pesto, roll the dough up with the pesto inside, then slice the resulting log into scrolls. Bake them, then brush sweet chilli sauce over top of them :D SO tasty.

For the kids I often mix it through pasta with some ham and a bit of cream, just to try and get a few more calories into them.

For me, I like some fat free or low fat creme fraiche or similar, plus some grilled salmon.

I also like it in a toastie.

Or as an alternative to tomato sauce on pizza.

Also in risotto - nice for those risotto ball things I can't remember the name of and cba to google.

Best sandwich = leftover roast chicken, green pesto and melted cheese 😍

Or salmon fillet, top with pesto, chopped cherry toms, chopped green olives, on a bed of green beans. Wrap the lot in foil, whack it in the oven and serve with buttered new potatoes. Heaven!!

I make a big jar of pesto about once every three weeks. (no big whup, is easy to do) We mainly have it:

drizzled on pizza (after cooking)
with cherry tomatoes and prawns stirred through linguine
with brocolli stirred through linguine
in big blobs on the top of minestrone or similar vegetable soup
on toast when I'm hungover

Pasta sauce works, and my one thing I can cook is penne con salmon,I chuck it in that.

Sauté red onions and ready-cooked smoked sausage (chopped) in pan, stir into cooked pasta with pesto. Sometimes I add halved mini plum tomatoes (which are past their best) to the sauté pan. Speedy supper for hungry teens - and great for me, especially with a glass of red wine WineGrin

I love pesto. In pasta is good, roast cherry tomatoes, peppers, onions and mushrooms then serve with chicken pieces stirred through pasta. Gorgeous with green or red pesto and tastes nice cold the next day too.
Have it in portobello mushroom, top with mozzarella and olive oil
add it to garlic bread, use it to liven up a cheese and tomato pizza. Can do all sorts with it.

I thought it looked gross for years until dp showed me otherwise
