AIBU To ask for your simplest, yet fast prep, healthy meals?

Please can people share their simplest recipes for those nights where I can't be bothered to cook. Preferably with prep time of 10mins or less (unattended cooking time can be much longer), yet still reasonably healthy.

In the summer, we eat loads of quick no or low-cook salads and light meals for summer evenings such as:

Tuna (or salmon) Nicoise with the usual boiled egg, boiled new potatoes and so on; crusty bread or breadsticks (DH likes to get the pre-made Pizza Express house dressing and imagine we are eating out Grin)

A big Greek salad - chopped tomatoes, cucumber, feta, Greek basil, olives and red onion, with pittas popped in the toaster, tzatziki

Falafels and pittas, warmed in the oven and toaster for a few mins, with houmous, salad, some 3-min packet couscous you can do with a kettle, can also get jars of stuffed vine leaves and Gigantes beans, or ready-made spinach and feta pastries

Some salmon pieces, either lightly grilled with lemon and served with (again quick 3-min packet) couscous and a green salad; or grilled brushed with soy, honey and dried chilli and served with rice and steamed broccoli

Warm pasta salad - fry red onion, peppers, mushroom; add chopped courgette and/or aubergine if you want; when soft but not too soft, add to cooked pasta, and add a bit of dried herbs de provence, a dash of olive oil, salt and pepper, and either chopped feta, or a tin of decent tuna (in water not oil), or add lardons to the veg when frying. Can be made in advance and also eaten cold the next day, yum.

We are also big fans of a light soup with crusty bread (mostly pre-made fresh soup but occasionally home-made); and of just a spread of salad, bread cold meats, cheese, fruit and yoghurt.

It's also worth having some lovely childhood comfort meals every so often - beans and cheese on toast or jacket potatoes; sardines on toast seasoned with herbs, lemon and pepper; poached or scrambled egg on toast; tinned tomato soup.

This is Pasta Bianco ....use xtra Virgin 1olive oil infused with garlic ( make own a few hours/day before or buy already made up) . Cook pasta ( any type ) . Once drained , 2 table spoons of the olive oil, a bit of salt ...then lashings of freshly grated parmesan ....so simple & tasty

Bumping for extra ideas! I tried the oven risotto last week, can't remember who posted it but it was great! So much easier than standing over a pan adding stock for 45mins while the kids kill each other, so thank you Smile

Gnocchi in passata with mozzarella.

Boil gnocchi for 2 ton4nmibutes til it floats.
Fry onions and garlic. Add 700ml jar passata. Simmer 10 minutes. Add 200g spinach to wilt in. Then stir in gnocchi. Stir in chopped up mozzerella ball and serve straight away before it melts!

Takes about 15 minutes

Traybake... Chunks of pepper, courgette, sweet potato, new potatoes, onion, cherry tomatoes (& any other veg you fancy really... Fennel is great) and some smallish pieces of chicken and chorizo (I subbed the chicken & chorizo with pieces of chorizo flavoured pork sausages but any decent sausages also works) - all on a big metal baking tray drizzle with olive oil and slam in the oven... Takes v little time to prepare and then you can drink G&Ts / supervise homework whilst it cooks!
