If you are vegetarian or vegan - what do you eat ?

DD 1 has gone veggie and gone up a dress size, basically because she's having pasta at every meal, cereal for breakfast and nothing for lunch, far too much fruit juice and scoffing 6 apples a day too.
She won't eat eggs - any suggestions it's driving me insane, I don't think she really likes vegetables if we are honest.

My DDs best friends are vegetarian - so I always keep a packet of Cauldron sausages in the freezer, as they can be worked in to most meals - even if the rest of us are having meat. I really like them too, and DD2 has even started eating them now! Veggie bolognaise or veggie chilli - with masses of veg 'hidden' in it is popular too - sometimes with quorn mince, sometimes just with the veg and some beans. I find that if you have lots of interesting bits to go with the chilli, they are more receptive (e.g. tacos, tortillas, guacamole, sour cream, shredded lettuce, salsa, grated cheese) as they can have fun building their own meal. Make your own pizza too... I do a homemade half wholemeal base, then let them do the rest - obviously still getting carbs, but at least some is wholemeal and if you do a decent tomato sauce plus mozzarella and a few different veggies on top (peppers, mushrooms, sweetcorn, pineapple and spinach go down well here), it's a fairly balanced meal. Does she like cooking? Maybe if you got her a good veggie cookbook and encouraged her to cook for the family once each week with a new recipe, that would get her trying some new things? Or maybe treat her to a trip to a veggie or vegan restaurant - to see if any of the meals served there inspire her?
