To not toast my pine nuts

Made a salad yesterday and my friend didn't understand why I didn't toast my pine nuts as they taste so much better.

Granted they may taste better, but I think they taste great without it and I've always thought that toasting nuts destroys much of the goodness, and when pine nuts are so expensive (especially the beautiful large Italian ones) I don't want to bastardise them.

YABsoU! Toasted pine nuts are so so so SO much better then untoasted....the flavour is released so well

Untoasted hey taste soapy.
Toasted they taste slightly less soapy.

YWNBU to serve untoasted pine nuts if that is your preference even though conventional wisdom suggests toasting/the usual preference is for toasting.
YABU to ruin a salad with pine nuts at all.

Toast them. Don't burn them. You have to stand over the frying pan and watch over them as they suddenly go from raw to charred.

Seriously, lightly toasted pine nuts are manna from heaven, otherwise it's the same as eating condensed milk before it's been turned into caramel.

heated fats - don't fry them in oil! Dry fry them until they slightly turn colour. It's the burnt bits that are carcinogenic, ie burnt sausages on a barbecue. You want to go for the lightly tanned look.

I rarely toast my pine nuts (did last night mind you) but there is nothing but nothing wrong with eating straight condensed milk.

Untoasted ones don't taste of much. Toasted is the way to go!

Heated fats? I take it you never ever fry anything, don't eat meat, and don't bake cakes?

You can get pre-toasted pine nuts in Sainsbury's - all the taste and none of the faff/accidental burning.

I only heat oils with a very high smoke point.

Pretoasted pine nuts Confused people buy these? Surely its far far better to do them fresh? Wouldnt sell them in Italy.

I once forgot to toast my pine nuts when making pesto. The difference was very noticeable, in a bad way.

Toasted pine nuts taste about a gazillion times better than untoasted. Just toss around on a dry frying pan over a lowish heat for a bit. Nom nom.

Never heard about cooking them destroying their goodness?

I'm pretty sure it does ruin the fats in them. Like any but they taste better roasted, but this surely makes them a bit junky. I eat cashews raw too

Pine nuts NEED to be toasted, it takes away some of that slightly greasy texture that they tend to have.

How the heck does toasting a pine nut make it "junky"? You're not adding any fat or taking anything away.
