I have always been a wensleydale and mature cheddar girl in the past but was bought a naice cheese board for christmas and thought I'd give them a go. Oh my god - they are delicious especially the blue stilton and the brie! What other cheeses should I try to continue my cheesey education?!!

I've never been able to get any stinky cheese past my nose to get it in my mouth.
How do you do it??

crossparsley Thank you, I've never thought of that! Might give non-cow cheeses a try. The trouble is, if they have the same effect, I'll be flat on my back for 3 days with the ceiling whizzing round and round. Dare I make the experiment?

Yes, yes to Pié D'Angloys. You can find it in Tesco, Sainsbury's and Waitrose.

You need to make sure it is just right though (like you would for a camembert): remove the lid and press on the cheese to make sure it is right.

I'm a goats cheese fan too, Saint-Maure de Touraine, a blue goats cheese is my absolute favourite but I've never seen it on sale here :(

It's one of the main reasons I go to France.

I like the hovis shaped crackers but there is never enough in the box and you can't buy it separate.

I always put my nose up to stinky cheese but I went to a dinner party where there was cheese board and to be polite I had some and got hooked every since.

They'll let you taste Grin

OK Here you go - it's not overly precise I'm afraid but I will get proper measures from MIL. Just be forewarned that I'm originally from Canada so recipes for me are done by volume and not weight Smile

A generous wedge of Stilton, at room temperature
Cream cheese (Philadelphia), about a little less than half the amount of Stilton you have
Softened unsalted butter, about a quarter to an eighth the amount of the Stilton
A good splash of cognac or port or other similar tipple that you enjoy

Mash all together with a fork. It needs some serious elbow grease to get it smooth so I usually get DH to finish the mixing. You can use a food processor too but it is very sticky so have a spatula/scraper to hand.

Serve at room temp with biscuits for cheese.

This is the low fat version, obvs. Grin

Hereford Hop.

If you can face it (I don't like it) Dorset Blue Vinney.

Gorgonzola is lovely with crackers and grapes and maybe some apple chutney.

Mimolette is a lovely French cheese. It's orange in colour. Look out for the mature or "vielle" one which is really yummy.

St Agur is a lovely French blue cheese. I prefer it to Roquefort, but don't bother with the spread version.

I love Manchego, which is a hard Spanish cheese made of sheeps' milk. I love it cut into cubes and tossed with pimento stuffed green olives, chili oil and chili flakes.

I agree with poster above baked Camembert is amazing, you need to buy one where the box is staples not glued so it doesn't come apart when baking then I make a few small incisions on the top with a knife and slice up a clove of garlic and PPP a sliver in each hole then the zest of an orange sprinkled on top and a little drizzle of olive oil, bake for apx 20 mins at 180ish? I like tearing a baguette and scooping it out with the crusty bits.

Mont D'or is the best thing ever baked with a few slivers of garlic and a bit of thyme pushed in through the slits. Eat with bread or biscuits or fingers or anything dippy.

OMG it is smelly but sooo good.
