I seem to be the only person I know with decent knifes. Everyone else I know has awful blunt knifes that I find really dangerous. I just tried cutiing a lemon at my friends with a black Handel knife and both sides are the same sharpness.

I'm now watching her carve a pineapple with a bread knife! I've ended up in a and e through the blunt knifes my parents have. Seriously aibu to think most people don't even know how to own and use knifes?

I hear that cheep knives are great for cutting small chickens.

Knife block? A microbiological breeding ground.

TinklyLittleLaugh · 05/10/2014 16:56

And people have teeny tiny little knives too. I have a nice big sharp one I bought 25 years ago in John Lewis that does me for pretty much everything except cutting bread.

Nomama · 05/10/2014 17:00

Mine's about 20 years old, combust. I am not dead yet. Not all microbes are deadly!

Knives get cleaned in the dishwasher and then go back in the block. They never go in between uses, why would they?

You could say the same about stacked plates... eurgh, the bottom of that plate was on the top of mine!!

Bulbasaur · 05/10/2014 17:05

Just buy a sharpening stone. They're not that expensive and they extend the life of your knives.

Isseyesque · 05/10/2014 17:16

Global knives. They are amazing. That is all.

Jux · 05/10/2014 17:22

Do you find there are days when you simply can't get a knife sharp? Something like too much water in the air.... we have a chef friend who agrees.

We use a steel mostly. It's probably nearly 60 years old (parents' wedding present) so it may be a bit worn Grin

Nomama · 05/10/2014 17:23

I can't do the action, Bulbasaur. My fingers and wrists are utterly banjaxed.

Or I would definitely have one, for that very reason.

ChippingInLatteLover · 05/10/2014 17:31

Nomana sorry to hear about your fingers & wrists :( LO's piano teacher is really suffering with her hands (too many years of playing :( ) I really feel for her as it's both personally & professionally that she's suffering.

AWombWithoutAFoof · 05/10/2014 17:38

I can't for the life of me sharpen a knife. Blush

Have tried a steel but didn't know how to use it and made the knife worse.

I hate those ones you draw the blade through, they give me goose bumps and again, I just make the knife blunter.

Is there a knife equivalent of an electric pencil sharpener?

AlpacaYourThings · 05/10/2014 18:10

Knife block? A microbiological breeding ground.

I really can't get myself worked up about that one.

LuisSuarezTeeth · 05/10/2014 19:38

Knife block? A microbiological breeding ground.

Squirt bleach in it. Like you would a loo-brush holder.

mausmaus · 05/10/2014 19:50

the knife block is no less hygienic than the average cuttlery drawer I would say...

Theas18 · 05/10/2014 19:58

Absolutely agree.

But how do you dispose of a rubbish kitchen knife?

Janethegirl · 05/10/2014 20:27

I use a steel on mine, note they are no good on serrated knives. Glass chopping boards also blunt knives. I managed to kill a new knife one Xmas on my DM's glass chopping board and it was a very nice knife.....

I bought an "Anysharp" a few years ago. It's very, very good: it's hard to screw up, and doesn't have the teeth-on-edge effect of stones. It's basically a device to steel your knife while keeping the angle about right. Someone who really knows what they're doing with a steel will do a better job, but for getting a decent edge on commodity knives quickly it's unbeatable. Only a tenner, too.

Another vote here for ceramic knives

I love mine, got them on a group on thing as they're so expensive. They are still razor sharp years on. You just have to take care of them as they break.

unlucky83 · 05/10/2014 21:30

Steels are only any good for keeping a knife sharp...use it often, there are videos on how to use one. Trick is to go slow at first - or even forever if nec! Get the angle right on every pass ... it takes practice to get it right and even more to be able to do it quickly!
(I also go away from me rather than towards me - looks odd but is safer)
But then knives can get past the point of no return (like mine did) - a steel will never get a decent edge on them and then you need either lots of patience and an oil stone or a grinder and someone who knows how to use it well....
You can get electric knife sharpeners...price range from £20 to £400 - a decent one is about £150 - I think they are ok but if your knife is really bad you need to use it a lot at first and often they aren't very good at doing near the heel of the knife ...

LuisSuarezTeeth · 05/10/2014 22:09

mausmaus you have a cutlery drawer???

What is WRONG with you? Wink

MyCarHasBrokenDownAgain · 05/10/2014 22:25

YY to ceramic. Got OH a Kyocera a couple of years ago for his birthday (he's more of a cook than me) - I won't use anything else for veg now!

trixymalixy · 05/10/2014 22:40

YANBU, I can't bear blunt knives, so dangerous. Next time I go self catering in taking a knife sharpener with me as the knives are always so blunt. Might take it to my MIL's too.

I have a few nice Global knives that I have asked for as Christmas and birthday presents.

My other bugbear to do with knives is people just chucking them in a drawer with other implements so that you can slice your hand as you rummage for the whisk!

LottieMumofWilfJenkins · 05/10/2014 22:57

My late DH was a casualty nurse many moons ago and he always said that blunt knives were more dangerous than sharp ones!

ReadyToBreak · 05/10/2014 22:58

Global knives are amazing.
