"you need to tear basil leaves, not chop them". What possible difference does it make except to make you look like a pretentious twunt.
Also, rubbing a garlc clove on bread. Bollocks does that give any flavour. Either chop up garlic and make proper garlicky bruschetta or do without.

If you chop them the metal of your knife reacts with the leaf and turns it brown.

I agree about the garlic.

but i'm not having that nasty bitter shoot bit in the middle of the garlic on my bruschetta.

I have been known to top and tail beansprouts though. Am full on food ponce.

But rubbing garlic does make a difference - a huge one if the garlic is fresh and juicy - just means that you don't stink of garlic quite as much (not that I care anywaySmile)

I think the cutting/tearing leaves thing is aesthetic - cutting the leaves (apparently) colours the edges so would not look as posh in salady things or thrown over pasta.

Or perhaps I am a pretentious twunt Grin

I think rubbing garlic on toast to make bruschetta does make a difference but I roll up basil leaves and cut with scissors = Much quicker, no mess.

Freeze the basil then just crunch it and sprinkle. Even quicker :)

Also, Sainsburys have got frozen garlic in the freezer section. Its just over a £1 and has the equivalent of about 100 pulped garlic cloves in the bag... bargain! :)

The garlic DOES work, I do it all the time for brushetta. You have to do it straight after it is toasted.

I have bought Jamie Olivers garlic crush and it's brilliant, no need for peeling!

Basil - it goes brown, but not (IME) if you use it immediately. And if you're cooking with it, it makes no difference.

Garlic - rubbing a cut clove of garlic on freshly toasted bread does work. If you put chopped garlic on the bread that will be way too strong and overpowering.

You can also buy frozen garlic - Taj brand - in bags with 40 'tablets'. They're about the size of a dishwasher tablet, so probably the equivalent of about 4 good sized cloves. Really convenient.

But I also have Jamie's garlic crusher, and agree that it's brilliant!

Nigel Bloody Slater is the worse for cooking bullshit. At least I think it's him. I saw some pudding recipe which involved a tiny amount of honey - a teaspoonful or something. And whoever it was specified wild flower honey - like that would make any difference whatsoever to the taste, or the flowers, or the bees, or anything at all. Just twattish poncery.

WorthIt thats the one! I couldnt remember the brand name. That stuff is brilliant.

The garlic in a jar stuff always has oil in it I find, or some sort of preservative and isnt just pure garlic. The Taj stuff really is the best I have found.

haha, when my kids come home from school they toast bread, rub garlic cloves on it add a few cherry tomatoes and then scatter ripped basil leaves........ive really taught them well havent i Grin
