no egg cake recipe?

dd2 egg,dairy,wheat allergic amongst others. Have recently made her biscuits with Dove Farm flour and Pure but was wondering if there are any cake recipes I could make?

I made a banana cake the other day with just flour, sugar, sunflower oil, oats, and bananas obviously.

Would go and get you the recipe if I didn't have a baby asleep on my lap...

Have not made any, but have a look at this fab blog. Loads of recipes free of allsorts, though many of them use specialist flours, xantham gum etc.

I know your problem! My DS's chocolate birthday cake starts with a Delia Smith sponge recipe in which I substitute, Pure Spread, Dove's Farm Flour and three heaped tablespoons of cornflour and one tablespoon of water for every egg. I add an extra half spoon of baking powder as well. Without eggs you can't get fluffy sponges - but a firmer sponge is OK especially when it's chocolate. I've never had any complaints! We then cover it with dark chocolate and put jam in the middle (apricot or cherry being the favourites at the minute). You can also use this mix for fairy cakes - leave out the cocoa and add cherries, or sultanas, or choc chips, or whatever you like! I bake them at 190 for about 17 minutes.

Recipe:
5 oz GF flour
5 oz Pure spread
5 oz caster sugar
1 1/2 teasp baking powder
6 heaped tablespoons of Corn Flour
2 tablespoons of water
l tablespoon gf cocoa

preheat oven to 170, gas mark 3 - line two 7" sponge tins

Beat everything together thoroughly, divide between the two tins, bake for approximately 30 mins.

oh thanks that sounds like a go er. will try. My sister made my niece a jelly with the candles in marshmallows floating on top!

Do you think the cornflour and water egg substitute would work for a Christmas pudding?

It doesn't need to be fluffy after all! The 'cake' mix just holds the fruit together.

My Brother is egg/wheat/dairy intolerant too and we're having him over for Christmas dinner.

Would work for a Christmas cake definitely I think but I've already made that.

fruit cake

10 oz mixed dried fruit
5oz soft brown sugar
4oz butter or marg
8 fl oz water
2 tsp mixed spice
8oz self raising four(which ever brand you use)

gas mark 4 180 degrees/350F
combine everything but flour in a saucepan and warm over a low heat until the butter has melted and slowly bring almost to boil.
the moment bubbles appear on the surface,switch off heat and allow to cool. Once mixture is cold,add flour and mix gently til flour totally mixed through.
Pour ingredients into 2lb lined loaf tin and bake for 50-55 mins approx.

Allow it to cool ,wrap in cling film and use the next day as it cuts better.

it is amazingly tasty. Ans sooooooo simple

Yes the jelly was a good one.

At my nieces party my sister also made Rice krispie cakes with the right kind of plain chocolate and mini marshmallows.

And toffee popcorn fairy cakes though not sure how that was done.

My niece was on an exclusion diet which unfortunately fell around her birthday but I loved it that dd had something fun to eat. Unreasonably excited about seeing her with chocolate all over her face

The dove farm flour we have is plain. Do they do a self raising one do you know? Or could I just chuck in some baking powder?

Would dairy-free marg work?

He's told me he's just going to have a day off this year - he is very lucky that he's intolerant not allergic - but I'd still like to try to make things easier for him...

have a look at this list of prescribable products,that you can also order from pharmacies...we give loads out on prescription. the juvela mix 500g is the equivalent of self raising flour.

sorry tried the link and its not coming up.

type in .....juvela self raising flour....and then look at prescribable products( think its the 3rd one down) and it gives you the whole list of things that doc can prescribe for you. We give out loads of these things at the pharmacy.

juvela mix 500g is the same as self raising flour.

I'm a bit of a novice at this stuff as he was only tested last year and we live a long distance apart so I don't get to see him too often but I want to make the effort for him.

girlsyearsapart.....if you cant get the mix...ask the pharmacist to order it for you or just put 1/2 tsp of baking powder on the plain flour. cant see why that wont work as it is then SR flour.

Lovely of you to try. Be careful though as there are 3 different types of Pure and only one is good for no dairy.

Can give you biscuit recipe if you want that too?

You can add baking powder to Dove's Farm plain flour - that is what I use. It can be substituted directly in most normal recipes.

Be very careful with Juvela - The Gluten Free Mix and the Gluten Free Fibre mix both have wheat in (i.e. wheat with the gluten reduced).
Only the Gluten Free Harvest Mix is free of wheat. www.juvela.co.uk/gf_harvest_mix.html
