Dairy Free Child Who Slightly Underweight

I am a mum of 5 year old twins (one of each).
The boy has a dairy intolerance, high metabolism who is slightly underweight.
He is an active child and I have managed to handle his dairy intolerance as I work in a nursery so knew how to change things.
I have been told we need to try and fatten him up so instead of oven baking food we need to fry them. What else can I do on a dairy free diet to try and fatten him up.

This child can eat more then me and I'm a 38 year old adult.

I think it because they asked what he eats and everything was healthy. I also explained he hardly ever has sweets, chocolate and he hates take aways of all kinds. I have the best twins who hate Mc Donalds and KFC lol.

I saw dietician for my underweight dairy allergic DC at this age. She suggested making every single mouthful more calorific. We added extra good fat (olive oil and olive oil spread etc) into his meals. Also avocado, nuts (the ones he wasn’t allergic to), coconut oil etc.

He’s now a teenage and still slim but he’s a very healthy eater.

Not exactly a health food, but I really recommend Nigella Lawson’s chocolate olive oil cake. It’s made with ground almonds and olive oil, so lots of good fats, and is amazing. My dairy free DS loves it. Alas, so do I, as proved by my waist line....

We had a same issue. You can still oven bake, just pour oil over it. I used to oven bake carrots/sweet potato/ parsnips with olive oil because it was my ds's favorite. Even frozen chips, I pour olive oil for him.
My ds isn't just dairy free, he is wheat free, egg free, and lots of other things free. He is still slim, but not unhealthy or underweight.

If he can eat nuts or trail mix they are very easy to eat as snacks and very calorific. Good way of putting on weight as my post lockdown size testifies
