Cheesecake recipe that isn't too cheesy

Winewolfhywls · 24/02/2026 20:24

Ds says my cheesecake is too cheesy, by which I think he means it tastes too much like the cream cheese I made it with. I tried ginger and white chocolate and I thought it was alright!

Can anyone give me a recipe or any tips for a less cheesy tasting cold no bake cheesecake as I would like to expand my armoury of easy to prepare before entertaining desserts.

Icing sugar mixed in with the cream cheese tastes better and less cheesy

Littletreefrog · 24/02/2026 20:33

Icing sugar and strong flavours such as dark chocolate or rhubarb

Winewolfhywls · 24/02/2026 20:40

You see, thought I had put icing sugar in it, or do you need an absolute bucket load?

Does rhubarb not make it sloppier?

What's your current recipe?
Would marscapone give a less cheesy flavour maybe?

Tigerbalmshark · 24/02/2026 20:46

Lemon? Would cut through the creaminess. Though if your cheesecake actually tastes of cheese you have done something wrong!

Does your DH actually just not like cheesecake?

Littletreefrog · 24/02/2026 20:48

You make like a rhubarb jelly type thing with gelatine and put a thin layer in top. Don't mix it with the cream cheese. You will have to Google it I don't know how to make it just know I have eaten it and it was lovely. I have to say though I have never tasted a cheesy flavoured cheesecake. Which cream cheese did you use?

littlemisssunshine247 · 24/02/2026 20:48

Lime

RabbitsEatPancakes · 24/02/2026 20:48

Sub some of the cream cheese for double cream.

RollerSkateLikePeggy · 24/02/2026 20:50

Out of interest, which cheese did you use? I don't think I've ever had a cheesecake which actually tasted of cheese!

TheLurpackYears · 24/02/2026 20:50

Deliah Smith’s lemon cheese cake is very good. Double the biscuit base though.

Littletinytarzanswingingfromanosehair · 24/02/2026 20:51

I actually find baked cheesecakes are less savoury tasting.
More of a faff yes but much creamier.
I did a white choc and raspberry one so creamy and worth it!

tealandteal · 24/02/2026 20:56

Does he actually just not like cheesecake? Does he like a bought one for example?

My favourite cheesecake is 1 tub marscapone, 2 tubs cream cheese and caster sugar not icing sugar. The sugar dissolves. I don’t like it with icing sugar. Use the nicest vanilla you can get. Nice with a base made of biscoff biscuits and caramel sauce or a plain biscuit base and fruit on top.

Or a burnt basque cheesecake

Lovingthelighterevenings · 24/02/2026 21:04

Cheesecake that is cream cheese and mashed up digestives biscuits isn't comparable to a ricotta/mascapone baked cheesecake. Try switching it out.

Lemon cheesecake, using condensed milk with the cream cheese:

BASE
200g (8oz) digestive biscuits
50g (2oz) butter

FILLING
Juice of a lemon
397g tin of condensed milk
200g (8oz) Philadelphia (full fat)

Method

  1. Crush the biscuits
  2. Melt the butter, and then mix into the biscuit crumbs
  3. Press into a 20cm/8inch cake tin, and chill while you make the filling
  4. Blend the condensed milk, Philadelphia and lemon juice till smooth, then pour over the chilled base
  5. Chill until ready to serve

I usually decorate this with a crushed Cadbury Flake or Twirl

This is our favourite (and easiest) cheesecake recipe: lemon cheesecake on a ginger base. It uses lemon curd (lime curd and passion fruit curd also work well) and mascarpone as the cream cheese

Baked cheesecake with mascapone is lovely... Similar to a Yorkshire curd cake. Not cheesy at all

Lemon cheesecake made with mascarpone is fab and isn't cheesy at all

ThesebeautifulthingsthatIvegot · 24/02/2026 21:32

Does it taste like cheese though? Or has he decided that it tastes like cheese? Does he like other cheesecake?

As a long-term fussy eater, I'm suspicious that this may end up as a case where no cheesecake will be good enough

I like baked cheesecake and I really don't like cheesecake at all otherwise.
I made a lovely New York cheesecake which was baked.
Some day when I can eat dairy/higher fat foods again I shall make it again.

I used Philadelphia I think!

He does like cheesecake but it's not his fave. This recipe sounds like a winner thanks as he does like biscoff, and I like the idea of trying the different ingredients of the marscapone and caster rather than icing sugar.

I'm afraid I don't like the baked version myself, I'm a fussy bugger with dessert

This sounds like something I would love to try, I’ve only ever used cream cheese.
