What order do your lasagne layers go in?

I am just about to make a chicken and veg lasagne - my first lasagne in years - and I can't remember for the life of me what order I used to do the layers in. (I used to cook a lot but have kind of lost my confidence with it lately, as this thread demonstrates!)

I am thinking - meat and veg/pasta/white sauce/meat and veg/pasta/white sauce (+cheese on top).

Does this sound ok?. Or do some of you use a pasta "floor"? If so what are the risks/rewards of this?

I know I could ask A I, but I trust Mumsnet more!

This means the sauce is encased in pasta and doesn’t disappear into the meat layer!
I need lasagne now 😂

Yep this is exactly what I do too.

I always make 2 or 3 lasagnes as I find them such a faff (I cook the meat sauce for 4 hours) and then I freeze the extra. I've got none in my freezer at the moment so this has prompted me to cook a batch this weekend!

Food is what your preferences are. I would use both, cheddar is a bit more melty and crunchy, parmesan is less melty and just as sharp.

Meat, pasta, bechamel (with nutmeg!) x 3, then a generous sprinkling of parmesan on top.

Absolutely no cheese in the bechamel, and no cheddar anywhere near it.

I make veg lasagne, but I like to have a pasta floor, as I feel it makes the whole thing sturdier. So, starting from the base of the dish, I do:

  • lasagne sheet of pasta
  • tomato based sauce
  • layer of veg
  • white sauce
  • possibly a layer of different roast veg, if not, lasagne pasta

Repeat the above for a few layers, then finish with the white sauce and breadcrumbs (I like having a crunchy top)

That reminds me of a gorgeous chicken and veg lasagne from m&s in the early 90s. It was so good. I bet yours is better obviously.

I'd put lasagne sheets, dry, on the bottom first, then either the sauce or the bechamel, (is it even called that?) then another layer until finished and then a bit of bechamel and grated cheese on top. I don't think it matters what order you put the two sauces.

I'd probably add some water or wine but not loads. I guess no wine if sauce had it already.

Pasta, bolognaise, béchamel, pasta, bolognaise, béchamel, cheese. Never have enough bolognaise for more layers. Cheddar in everything as it tastes great (and is cheaper)!

Traditionally the lasagna should be green, but you can't get it here, so sometimes I add spinach to the layers if you want more veg. It's lovely and adds more liquid to the layers when using dry pasta. I also only use dry egg lasagna, or fresh.

I am still in shock from discovering that English make lasagne with white sauce. Lasagne bechamel should have nutmeg in it and Parmesan should be sprinkled over each bechamel layer.

Isn’t that just white sauce? I put nutmeg in mine, and I also throw some Parmesan on.

I put a layer of pasta down first, then meat, pasta, sauce, pasta, meat, pasta, sauce, more cheese. It helps make things tidier when you’re serving it.

Of course it is, the point is that in lasagne it needs to have nutmeg in it and Parmesan shaved over otherwise you’re just eating mince with white sauce and a bit of pasta.

I start with a thin layer of meat on the bottom to stop the pasta sticking then it’s pasta, meat, bechamel, chopped mozzarella and little bit of Parmesan then another layer the same then my final layer is pasta, bechamel and Parmesan.

I’m a meat eater but I only ever make veggie lasagna's as they’re much nicer in my opinion.
Definitely lots of cheddar in the cheese sauce. Béchamel sauce is tasteless without at least two types of cheese in it. 😁

I do more pasta so meat/pasta/cheese sauce/pasta/meat etc until I run out, but I have two teenage boys who need filling up!!!

So glad someone said that, I was getting spinach withdrawal reading all the suggestions that didn't mention it.

I generally agree with you.....except one burns night I did make a haggis lasagna for some friends, so we are all guilty of experimenting at times. 😂

I butter the dish then do
pasta - meat - pasta - meat
pasta
cheese sauce on top!
Then

i add a dollop of pesto!

I like that it comes clean off the bottom!
