I was lying here thinking about what to make for dinner (I really wanted to make a tuna pasta bake but I forgot to buy mushrooms) and now I can't stop thinking about the cheese toast and tomato soup I ate this week, It was home made soup (not by me!) and FUCKING TREMENDOUS and I just know it won't taste half as good if I make it!

I’m making a lot of salads with cold rice/pasta/couscous/ bulgur and assorted chopped stuff at the moment. The nicest was panzanella (dry bread gets soaked in tomato juice and vinaigrette) with different colour tomatoes, onions, cucumbers, you name it…
Home made potato salad was a hit with marinaded pork steak.
And the rest of the potatoes did 8 minutes in the microwave and 10 in the air fryer. I’d forgotten how good that was!
But Austrian cheesecake was hard to beat (just under a week ago).

The tuna and vegetable curry I had for lunch was pretty darn good! And I'm about to have steak, jacket potato and salad. Yum yum.

I had aloo gobi with roti and a samaso from my favourite punjabii takeaway yesterday. Absolutely amazing!

My husband made kofta, tzatziki, flat breads and lime rice last night.

It was delicious!!

He's a great cook, lucky for me as I love eating but loathe cooking.

Raging PMT yesterday evening and remembered I had a bag of Cadburys caramel buttons lurking in a cupboard. Demolished them and felt much better about 20 mins later.
Tuesday lunchtime I was gazing into the fridge for inspiration and realised we had a bit of smoked salmon, a couple of eggs and some rocket. Then I remembered we had an avocado in the fruit bowl and that it was just at perfect ripeness. Enjoyment was slightly marred by teen DD appearing just as I was dishing up and ending up having half of it for her lunch!

I had salmon sushi from Tesco for lunch - yo sushi brand. It was a bit wierd as it had no wasabi and the soy sauce had the consistency of plum sauce and it came with crispy onion pieces (!) but for a meal deal it was yummy.

I had lunch out with DC today. A sandwich with halloumi cheese (fried), roasted aubergine in Greek herbs, hummus, cucumber tzatziki, olives. It was outstanding! The cafe always does interesting sandwiches, never just cheese or ham.

Favourite dinner this week was a Jamie Oliver recipe from his 5 ingredient book. Pork mince, pasta, dried mushrooms, onion, parmesan cheese. Yum!

During the week I made ribeye steak (in the airfyer (don't judge as it was amazing) with green bean/onion/potato mash.

I've been thinking about it as it was very moreish.

Went out first lunch yesterday and had Vietnamese, fresh summer rolls with prawn and chicken with lemongrass, chilli and rice. Light, healthy and tasty for summer

Mushrooms with tuna??? I love both but wouldn’t put them together!
my favourites this week have been:

haddock and chorizo baked with baby potatoes, olive oil, lemon, garlic, parsley roasted red peppers and paprika. Yum.

homemade pesto sauce with rigatoni, chicken, mushrooms and onions.

Lidl mixed spice nut mix including pistachios.

M&S version of a chocolate and vanilla cornetto - so good, so much better than the original.

Toasted cheese and marmite sandwich, perennial favourite but haven't had one lately due to hot weather.

My DD made a very nice caesar salad with chicken.

Oh man, there's some excellent foods on here! I live in Scandinavia now and the seasoning are LACKING!

I ADORE a Toby Carvery, Whenever I fly back to London it's first on my places to go (I will not stand for Toby slander!) except last time I went for 5 days, 3 friends separately surprised me and whisked me off there because id been moaning about it so much 😂3 Tobys in 5 days actually was enough as it turns out!

And Cadburys caramel buttons are equivalent to crack. Ive run out of supply and cried about it 😂

Mushrooms and tune work in tuna pasta bake or a tuna olives pasta sauce I make but it's not a common theme!

I believe I am a freak because everyone seems to adore these but chocolate and fruit (largely berries) makes me want to Boak 😂

I knew I would be out for whole day - so made myself an early brunch of flatbread, salsa, feta, avocado, fried egg, chorizo, black beans and soured cream. I was in heaven, honestly. It was such a contradiction - filling but light!

I made Korean bbq-ish pork belly for dinner. That wins. Or maybe the home made scones my kids made yesterday.

the belly pork was braised in the oven for a few hours, dried, cooled and chopped and then marinated in a sauce and cooked in the oven. Sauce was honey, soy, garlic, ginger, gochujang, sesame oil and soft brown sugar. Really good.
