What is everyone eating in this hot weather?

Please help me with some food ideas for this weather! None of us cope with the heat well so standing in the kitchen cooking when it’s over 30 degrees is not fun. Unfortunately, we are not a family that enjoys salad, my partner and son don’t like pasta and I can’t keep eating bread and cheese for dinner so what is everyone else eating? Would like it to be hot food, but hot food that’s fairly quick to cook! All suggestions welcome!

Pizzas. All in one tray bake with chicken thighs, onions, new potatoes, some other veg. Chicken flat breads / kebabs. Sausages, new potatoe salad. Fajitas (roast it all on a tray bake, no hot cooking). Chops and salad. Bacon sandwiches.

Omelette, beans on toast, toasties,yes the salad and sandwiches, stuff that isn’t a big dinner and quick to cook but it certainly is difficult finding things that aren’t the same every day

The same a stuff we eat year round.

Most of it cooked on the hob. We rarely use the oven.

We made a Mexican bean salad last night with tinned sweetcorn, chopped avocado, tinned black beans, coriander, spring onion and tomato. It was more of a salsa than a salad.

you can make a dressing with lime, honey and olive oil, or you can just squirt on some lime if you prefer.

We've had it in tacos which only need a quick flash in the oven. Or failing that in wraps which I don’t even bother pre heating, but again a quick flash in a frying pan will do.

or just on its own with some fresh bread

add some pre cooked chicken, guacamole, creme fraiche, grated cheese, whatever you fancy.

no heat or minimal heat required! And feels like a real meal

my kitchen is also too hot and gets the late afternoon sun so the oven is pretty much banned in this weather 😅

Just had my usual breakfast of porridge with some blueberries, a cup of tea and a slice of toast.

Tonight I’m doing a couscous salad with feta, pine nuts, raisins, lemon and maybe a bit of coriander - again with a bit of fresh bread, and some precooked chicken for those who want it. Boiling a kettle is the only heat required 😄

For hot food, scrambled eggs / poached eggs on toast are quick…. Buy fresh pasta rather than dried as less heat required and also those packets of rice that you can heat in a pan

Runner beans freshly picked from the garden with jersey potatoes and a knob of melting butter.

That's kept us going most nights for a couple of weeks now.

BBQ! Hot weather and even not so hot weather is the perfect excuse to cook as many meals outside as possible for me 😁

Quesadilla are quick and delicious and you can chuck in whatever you want.

I'll sometimes do a big batch of food in the oven in the cooler morning then we'll eat that over the day. So currently, cold sausages, chicken goujons and pork meatballs baked in tomato sauce.

There's cold rice in the fridge already to go with the meatballs, will microwave and add cheese as needed. I'll make a batch of red coleslaw (red cabbage, carrot, vinegar and mayo) later to go with the sausages and goujons, either on their own or in baps.

DH is fond of a cheese, tuna and jalapeno grilled cheese sandwich.

DD5 enjoys eggs so will have a hard boiled, veggie crisps, carrot buttons, sliced apples, baby bel etc for lunch.

D's isn't into meat so will have a heap of rice with chopped veggies through it, with cheese and a yogurt/cucumber herb dip on top.

I know you aren't into salad but we enjoy a prawn cocktail or chicken bacon ceasar salad and you could just put them in a wrap to disguise the heathly! I usually have cold chicken in the fridge just got this.

Thanks for the suggestions so far. We are a proper English meat and gravy sort of family so struggle finding foods we like in this weather. Perhaps a steak baguette could be good as the steak would only take a couple of minutes in a pan. Our kitchen is south facing and is just unbearable in this weather! Bring on autumn!!! Smile

I am so sick of eating salads now, can’t bear the thought of going to the shops so will cook from the fridge/freezer/cupboard.
Today I’ll do a grated courgette (have about a kg) perhaps carrot thing on the hob then air fry with some cheese on top. (I may put some chorizo style sausage in so the kids won’t complain too much).
For tomorrow I’m defrosting turkey for some of those packet-tortilla things, use up the peppers and probably more courgettes in the mix as well.
The rest of the meals is ice and ice cream. My kitchen is also south facing, I cook for lunchtime as it’s usually hotter in the afternoon.

Night before last we all had cornflakes. Last night the kids had pizza and salad and I had half a jar of olives and some gr yoghurt. No idea about tonight. All suggestions are met with turned up noses.

We had our big supermarket delivery a couple of days ago so we're busy eating up the 'fresh' fruit and veg before it goes off.

Chopped up salad for me for lunch today - DH will probably have salami and olive bread, heaven forfend that anything fresh will touch his lips! Tonight it's chicken stir fry. Mine will have a much wider variety of veg than his, but he will eat it because I will have made it for him.

Tomorrow we are having ostrich steaks. Our supermarket has started to stock them so I thought we would try them as they are very low fat and I'm trying to lose some weight. I'm not sure what with.... Maybe with salad and a jacket potato. DH will probably have chips.

We’ve been making good use of the bbq and the outdoor oven! BBQ is coal and the oven is wood fired so it’s a juggling act for dh getting them both to the required temperatures but he’s enjoying it, loves cooking. We are also not eating until around 9pm when it’s not so warm. Last night it was closer to 10!
We had steaks on the bbq and potatoes and veg done in the oven.
I love salads and eat them daily - mostly for lunches but also do a salad to have on the side of dinner most nights but Dh and ds wouldn’t consider salad itself as a main meal.

A quick prawn curry last night. I'd got some prawns in the freezer, some with garlic/parsley. Worked well.

Weekend treat - steak pan cooked, air fryer chips. Broccoli/peas if you don't go for salad.

Omelette Spanish style can have veg in/be entirely veg. I do usually have this with green salad but maybe make a tomato based one with basil and mozerela - NB I don't put cheese in omelette.

Stir fry is quick to cook once you've chopped everything up

I'm doing an 'indoor bbq' tonight and tomorrow - essentially sausages/burgers cooked in the oven and served with the usual bbq sides (salad, potato salad, crudités and houmous, doritoes). We would do a normal bbq but with a 3yo and a baby it's too much effort just for us 😆

Lunch is picky bits.

I've just roasted an emu sized chicken. Served with salad (optional) coleslaw and Jersey royals. Totally yummy and loads of chicken left for lunches tomorrow. Always a winner in my house and not much cooking involved, bungalow it in and walk away. Boil potatoes when needed.
