I've had tea and defrosted pineapple chunks and cherries, with chopped nuts on top - I'm out of yoghurt.

Will have a second breakfast later, after the Ocado delivery!

A jammy egg is one that is cooked longer than for soft boiled dippy egg, but not as long as for a hard boiled egg. So it's 'medium' rather than 'rare' or 'well done'.

What is a jammy egg?

It’s right between a soft and hard boiled egg. The yolk gets all sticky (like the texture of jam!) so it doesn’t run off the toast.

Dd and I ordered a double sausage egg McMuffin meal deal. A rare event but I had a bad night as stress going on at the moment in my life.

Really annoyingly they forgot my cup of tea ☹️

I have just made cinnamon buns for everyone but I can’t stand cinnamon so I made one with jam for myself. About to have it with a coffee.

M and S protein maple pancake (warmed in the toaster) with honey, yoghurt and raspberries.
Cappuccino first thing.

A punnet of Tesco Finest cherry tomatoes sautéed in olive oil and black pepper, which were meant to be on sourdough toast but I realised I forgot to buy the bread.

Raining here.

UPDATE - just ran to Lidl for sourdough, and breakfast is complete.

When you say 'ground pork rinds', is that something you buy like that? Or can I just stick a pack of pork scratchings in a blender?!

And what are the quantities/temp/timings please?

I’ve used it to make bacon sandwiches and toasted cheese too. You could chop up cooked bacon and add it to the mix. It’s really versatile.

I buy the pork rinds whole and blend them myself. I have an autoimmune disease that’s in remission on carnivore so I have to be really careful about ingredients. The whole pork rinds are just skin and salt cooked in their own fat.

The recipe is:

12 eggs
300g cottage cheese or cream cheese
100g melted butter
170g pork rinds
pinch of salt

Whiz everything except the butter in a blender. Add the butter slowly so you don’t scramble the eggs. Pour into a loaf tin and bake at 180°C for 45 mins to 60 mins depending on the oven. When a skewer comes out clean it’s done.

Let it go completely cold then slice it and grill it for the best crunchy results.
