What do you eat for lunch and breakfast?

I have to feed two vegans for a few days soon. I think I am okay on the evening meals but I have no clue about breakfast and lunch. Cereal and toast I guess but what about anything more substantial, like Brunch?

And what sorts of things do you have for lunch? What can you put in a sandwich or a wrap? So far I've thought of falafels and hummus and that's it. Oh and jacket potato and baked beans, but it seems a bit basic.

Breakfast could be toast with avocado. Also, vegan yoghurt with added fruit, nuts, granola.

Sandwiches are more tricky. There are some fake meats but not all vegans eat those. I love Squeaky fake chicken and La Vie ham.

Alternatively I have sandwiches with roasted mushrooms / cauliflower / courgettes as the main filling (separately!). If cut into large slices or chunks before roasting then they make a good filling with added salad and mayo. These can go in wraps or bread.

Mexican is good for lunch. Mixed beans and vegetables with salsa and guacamole. Stir fry with tofu. Curry with paratha or rice. Salad with roasted chickpeas. Toast, porridge and fruit or scrambled tofu are good for breakfast.

I'm not vegan but cater for them occasionally. For sandwiches I do coronation chickpea (chickpeas mixed with vegan mayo and curry powder) - you can add red onion, chopped coriander, sultanas, almonds or apricots too. I also do vegan cheese (Violife slices are the best) with chutney & rocket. I also do smashed avocado (you can buy it in Waitrose and Asda) with sliced tomato & watercress. I also make a vegan egg & cress mayo with chopped tofu, vegan mayo, mustard and a pinch of kala namak (don't panic, you can definitely buy this from the spice rack in Waitrose) - it gives the mixture a sulphury, eggy smell and taste. I also do peanut or almond butter with homemade apple slaw - basically coleslaw with chopped apples mixed with either vegan mayo or vinaigrette.

For breakfast you could get some vegan croissants (Pret a Manger brand in Tesco) and serve with vegan yoghurt and some fresh fruit or cereal with almond milk, toast, vegan spread and jam (not honey!). For brunch you could do fried mushrooms on sourdough with vegan spread or vegan sausages with baked beans and fried potato. Or just a nice salad with sliced avocado, some tahini or hummus, lettuce and some vegan feta cheese drizzled with balsamic vinegar.

Vegans are usually just delighted that you've provided something they can actually eat so don't go too mad!

You've had lots of good suggestions so I won't add any more but just to say that depending on why they are vegan, they may not want to eat palm oil so I'd stay away from that.

Foul Muddamas (fava beans), add chopped tomatoes, lemon, cumin, coriander and onion with pitta bread. I eat it both for lunch and breakfast.

Roast butternut squash, scoop out the flesh, dice and mix with Couscous and chopped peppers. Drizzle with olive oil bake for ten mins and serve with salad.

Lidl do a plant based morrocan burger which is delicious with tomato salsa too.

Vegan sausage sandwiches are nice.

My BIL is vegan . He always has vegan 'yoghurt' with berries and seeds for breakfast - he brings his own - but he would be happy with any plain vegan yoghurt and fruit plus seeds, nuts, muesli, whatever I have on hand.

For lunch he likes things like falafels, hummus, salads with chickpeas, that kind of thing, mainly because he can't be bothered to cook more than once a day. He is happy to eat soups (don't forget you CANNOT use meat stock!), roasted vegetable tarts (most ready made pastry is vegan) if I cook them. In the evening I would do a vegetable stew, curry, risotto, garlic mushrooms, that kind of thing. I quite often add in yeast flakes for nutrition and extra flavour. Marmite is great for added flavour also, but is very salty so there is a limit to how much you can use.

He does NOT like bought in vegan food, like ready meals, or vegan cheese or meat alternatives. He is careful about preservatives, additives, that kind of thing.

We have brunch with vegan friends regularly, they always offer vegan sausages, tomatoes, mushrooms, beans with breads, conserves and spreads. For lunch, I would stick with sandwiches or a decent homemade soup. I’d just go with hummus / avocado salad sandwiches (which I love anyway so it’s a treat for me too!). If I was being a bit fancy, I might do some quick pickled red onions and grated carrot.

Sandwiches: spread olive tapenade/ pesto/ vegan mayo/ pickle/ tahini,
top with tomatoes/ roasted veg/ avocado etc.

I quite like some of the vegan cheeses, but not everyone will be happy with these as they are undoubtedly UHP.

lunch is usually leftovers. If you want something quick, how about a quiche? Higgeldy do a nice tomato one which can be found in bigger supermarkets or else falafel and salad with pitta or flatbread.

I'm not sure how you get vegan quiche though? What replicates the egg? I suppose you can just make a pastry base and layer vegetables on top, maybe with some vegan cheese, but it wouldn't be like a quiche, it would just be a tart of sorts.

I have some gram flour so I'll try those, thank you. They are here now, we've just had a Korean rice noodle thing with loads of shredded veg and a sticky, spicy gochujang sauce. It was lush.

Brekfast is usually avocado toast, soy yoghurt and fruit or porridge and berries. Occasionally will have fried potato cakes with baked beans, spinach mushrooms and tomatoes.

Lunch might be lentil soup with olive bread, hummus with flatbread, cous cous and veggies/salad, or marinated tofu with veggies and noodles, maybe leftover lentil loaf with steamed veggies once in a while.
