I had (vegetarian) chicken Caesar salad, corn on the cob and garlic bread. Then I had a fruit and nut mix afterwards.

What about you?

Home made veggie lasagne (hidden veggie tomato sauce with quorn mince and home made very cheesy sauce), mixed green salad with mustard and honey dressing, steamed asparagus, and garlic dough balls. It was very nice indeed!

This is pure MN wankery, but wild garlic pesto pasta which DD9 skipped off foraging for this afternoon! It was delicious! With a side of weird vegetarian scampi that needed used up as we are going away tomorrow. Which was actually quite good too.

Ooo, recipe please

I make pesto a lot so don’t have quantities for you, I just chuck things in. But broadly, a pack of basil, similar amount or more of wild garlic, a handful of walnuts and maybe 100g pine nuts - toasted first, half a block of pecorino or Parmesan, juice of around half a lemon, and a big slug of olive oil, maybe 100ml.

It’s the only green meal my youngest will eat really so I usually add in some raw broccoli, spinach or kale and get away with it. I usually reserve some of the pine nuts and some of the cheese to stir in after. Blitz in nutribullet or similar blender, probably would be lovely in a mortar and pestle but not easy in those quantities.

If you have lots of wild garlic near you I can also highly recommend wild garlic and cheese scones, and also using it to make garlic butter for a baguette. Mmm. My kids liked it better than my usual pesto (which would use half a clove of regular garlic, maybe I should use more!)

Indian Butter Chickpeas Recipe - By The Forkful

i did use a can of coconut cream which made a lot of liquid so i suspect double cream may have been better

I know nothing about Peruvian cooking, what does the Peruvian chicken consist of?

(been abit sick this week so not feeling like eating alot).

mondaytosunday · 18/04/2025 14:29

Last night we were on a spectacular Belmond Pullman train. For dinner we had first course of hake in a bean sauce, main was the most amazing lamb I’ve ever had on bulgar wheat salad, dessert was a banoffee mousse.
In contrast, tonight’s meal will be Tesco Finest fish pie and veg.

Sunnyside4 · 18/04/2025 14:43

Got back late, so didn't make the courgette gratin I'd planned, so fish in breadcrumbs and peas, green beans and carrots for me, DH had chicken fillet and potatoes with veg.

Tonight will be nicer, seabass, roasted courgette, some greenbeans, a few peas, and making roasted herby potatoes for DH.

K8Davidson · 18/04/2025 16:50

Updating this with my dinner today! We had lemon and pea risotto with a mixed salad (cucumber, lettuce and some onion)
