Seriously though, even children can make them but literally every time I try they go wrong and taste terrible or burn. I just can't do it !!

Try American pancakes, much more forgiving :)

Hhoudini · 23/02/2025 17:49

1 egg to 1 cup of flour and 1 cup of milk.
heat the oil till it’s really hot then put out excess into a mug
pour a bit of batter in the middle and swirl it round to cover the bottom of the pan

I think the success is dependent on the right pan to be honest, a bit like omlettes

Lovelysummerdays · 23/02/2025 17:49

ive found the recipe for crepes rather than pancakes more forgiving. It’s on bbc good food.

shivbo2014 · 23/02/2025 17:52

Those recipe changed making pancakes for me, I think adding oil into the batter is what helped!

Maxorias · 23/02/2025 17:54

Also make sure your pan is on fairly low heat as otherwise the pancakes burn before they're cooked.

reluctantbrit · 23/02/2025 17:55

Don't have the pan on too high. It will burn before the mix had a chance to set properly.

I don't use oil, tastes not nice for me, I use Stork Baking Margarine.

MagpiePi · 23/02/2025 17:55

Don't put too much mixture in the pan, and turn them over as soon as the top has gone dry.

This is the recipie I use too. Always works.

GroovyChick87 · 23/02/2025 17:56

Same, I can't do them either. My husband does them in our house. He's even mastered " the flip". Before him I used to buy the ready made crepes that you just heat up in the frying pan.

AnnaMagnani · 23/02/2025 17:56

The first pancake is always rubbish. Don't let that one put you off.

Use little butter not oil, it doesn't need to be super hot at all, medium heat, a hi quality non stick pan and ladle, one ladle full is enough for a 28cm pan.

Leave it in till the edges curl, flip it over with a spatula, cook for a couple of minutes.

Oh and make the mixture the night before, loads better. .. 1 egg, couple of table spoons of flour, add milk until its nice n thin.... pinch of salt, i always add a v small amount of whole meal flour for texture

Hoppinggreen · 23/02/2025 18:00

I can't do it either even though I am generally a good cook. Struggle even more since we got ain induction hob

Dublinstar · 23/02/2025 18:04

Buy a crepe maker. They are fairly cheap and make the best pancakes. We use ours most weekends.

WonderingWanda · 23/02/2025 18:06

What's going wrong for you op? Common mistakes are making them too thick. Having the heat too high so they burn. Sticking to the pan or scrunching up instead of flipping. The trick is to have a medium heat and wait for all the air bubbles to pop and the top seems dry before flipping.

TakingTheHorseToFrance · 23/02/2025 18:06

My pancakes were always rubbery but it's because I used an electric mixer which is a no no for pancakes. I now follow a martha Stewart recipe. Melted butter, whisk in 1 egg, 1 cup milk, pinch sugar, I tsp baking powder. Then carefully fold mix in 1 cup self raising flour flour (use whisk) but don't beat too much. Leave sitting for 10 mins and you'll see little bubbles forming

I make pancakes an use an electric pancake maker that makes 6 pancakes at a time.

username299 · 23/02/2025 18:07

I can't make them either. They're hideous.

Vroomfondleswaistcoat · 23/02/2025 18:09

I heat the pan really hot, make the first pancake (which is rubbish and I usually end up eating it straight out of the pan while I stand there - no point in making others suffer) then turn the heat down to about half. The rest of the pancakes usually turn out all right.

bloodredfeaturewall · 23/02/2025 18:11

if they burn the heat is too hot.

I use the same quantities as pp (per person: 1 egg, 1 cup each flour and milk)

heat to medium heat, a very small amount of butter or oil)
pour in batter
turn once the top is not liquid any longer.

the first pancake is 'for the dog' depending how that turns out adjust the heat of the pan.

good luck

Diningtableornot · 23/02/2025 18:12

Get the pan really hot before starting and expect the first pancake to be messy. Use butter rather than oil for a better taste. Watch the mixture solidify and ease it off the bottom of the pan with a fish slice as soon as it starts to stick.

bloodredfeaturewall · 23/02/2025 18:12

oh and leave the batter for half an hour before baking. that gets rid of the annoying lumps.

Wacadu · 23/02/2025 18:13

I can't do them either. Or scones. Pisses me off.

maximalistmaximus · 23/02/2025 18:14

The first one is never good.

You need a really hot pan.

You need to stand over it al all times.

I use 4 tablespoons of self raising flour, 3 tablespoons of sugar and one pinch of salt per medium egg.

Mix with a whisk then add milk to the desired consistency.

Best to make the night before and leave it the fridge.

I use butter in the pan. A nice big frying pan.

Pour in the mix. Wait til it's all bubbly then flip with a fish slice.

Have a warm plate & kitchen roll to keep them warm. They should be eaten as quickly as possible.

jasflowers · 23/02/2025 18:14

I find them childs play... sorry.. but struggle with a lot of other things cook wise but not pancakes or omlettes...

AnnaAkhmatova · 23/02/2025 18:15

Having a special crepe pan helps. I use butter not oil and a palette knife for turning them over.

Batter is 4 oz plain flour, break in a large egg and stir. Then gradually add 1/2 pint of milk. If you put the milk into fast and it's gone lumpy, you can always use a stick blender.

I make the crepes relatively thin, with the melted butter quite hot. Pouring the batter carefully from a jug helps. By sliding/trying to slide the palette knife under, you can tell whether or not the cooking pancake is ready to flip.
