Why can't I make pancakes?

Seriously though, even children can make them but literally every time I try they go wrong and taste terrible or burn. I just can't do it !!

I do 140g flour, 200ml milk, 2 eggs. They turn out perfect. Non stick pan but I spray it with fry light anyway, thin amount and tilt it to spread round the pan

I could never do it until I brought this. Put the ingredients in, shake it up then unscrew the little dispenser bit on top qnd pour into pan. You need much less mix then I used to use, so I think it mainly just stopped me overpouring.

I make my batter using equal volumes of egg, plain flour and milk. I usually use two glasses and match the volume of egg in one glass with the flour in the other glass. Then pour the egg in to a mixing bowl then use the egg glass for the milk to match the volume of flour. This all goes into the bowl with the egg. I ether whisk by hand or electric until bubbles form, then cook immediately in a medium heat pan with melted butter.

It's all about the pan!

Got to be smoking hot, use a brush to oil it and expect the first pancake to be crap.

I use the 123 method, never fails after years of serving what looked like scrambled eggs!

100g plain flour
2 eggs
300ml milk

I do also put a little oil (about a tsp) in the batter mix

I still use the recipe from my DM’s Homepride cookbook. You have to cook them (and Yorkshire puddings) in lard. Oil doesn’t get hot enough. They are two of the things I make best. Everyone I know who says they turn out wrong uses oil or that spray stuff.

I use the he better homes recipe, it’s an easy pancake to make. It’s starts with 1 and a quarter cup of flour, 2 tsp’s of baking powder, 3 tblsp sugar 1 egg, 1 cup of milk and a pinch of salt. Mix and let sit about 15 minutes. Restart to get some of the lumps out. Heat a large pan with either 2 tblsps of of butter or crisco, I like crisco cause it gives crispier edges. I pour small about a quarter cup of the batter into 4 small pancakes, watch so they don’t burn and regulate the heat accordingly. When the top bubbles up and you check the bottom to see if they browned, turn them over and brown on the bottom. Make sure to keep an eye on them. I sometimes chop up apples or bananas or sprinkle with chocolate chips on top. Watching is the same, the exception is the chocolate chips, push them into the batter so they don’t burn when flipped. Serve with butter and warmed up real maple syrup, no imitation syrup. It just ruins them. I meant restir not restart the batter. Everyone loves them.

Do you put lard in the pan to stop it sticking?

An electric pancake/crepe maker is amazing! Someone gave me one and I was very scornful of it but it’s one of the most used gadgets I have. Because it always stays the same temperature you can churn them out and they never stick.

@Sunshineandrainbow I think so, they never stick for me. Lard also heats to temperature, it should be smoking slightly before you add the batter. I can’t find anything online now to say you should use lard. I’ll have to see if I can dig out the book!

Also make sure your pan is on fairly low heat as otherwise the pancakes burn before they're cooked.

I’ve made pancakes literally dozens of times for the Gdcs - always on high heat! But with a minimum film of oil and I don’t put the batter in until the pan is really hot. I usually use 2 eggs to 100g plain flour and just under 1/2 pint of milk.
They cook really quickly - flip or turn over once the underside is done. IMO a dedicated proper pancake pan is best - and just wipe it out with kitchen roll.

This is the best ratio I’ve found to. I make in all in a blender. Never fails. Although I’d would buy a good quality pancake pan
