How do you make your scrambled eggs?

Just made scrambled eggs for the youngest because he didn't want the tea I had cooked.

My method is to seperate the eggs and whites, scramble the whites and when they're pretty much scrambled add the yolks to make a 'sauce'. Continue cooking for a further minute and serve. No butter or oil needed and seasoning is done at the table.

However my 15 year old tells me that this is wrong and I should beat the eggs with a bit of milk and some seasoning and then scramble them till cooked.

DH says that the pan needs a bit of butter, no milk but the eggs are beaten together before cooking. Scramble till cooked and then season at the table.

So how do you cook your scrambled eggs?? Who's right in my family?

Milk and seasoning. In the microwave to save washing up a pan 😂

But I don't really like it, so never make it unless one of the dogs are ill. Obviously no seasoning for the doggos!

This thread is fascinating and just goes to show that there are as many different ways to scramble eggs are there are cooks. Much like Shepherd's Pie. I doubt any two of us make Shepherd's Pie in the same way.

My husband does his scrambled eggs in the microwave. I hate them done this way - they always seem rubbery.

I beat the eggs together, and put directly into a pan, without milk, butter, salt, pepper, diced butternut squash (I LOVE that autocorrect 😂), chives, creme fraiche, heavy cream or any of the other ingredients mentioned in the thread.

Cooked very slowly on the lowest possible heat, stirring constantly, until they reach the right consistency. Well, right for me!

The only way is to melt butter in a pan, whisk the eggs in a bowl until all one colour and cook low and slow until just set. They should be silky, not dry or fluffy. Never add milk. I don’t season before cooking either. I only like a little salt over mine.

no milk just salt and pepper - cook in microwave - stir mid way - remove before fully set and leave in bowl for a minute so they set but are not rubbery and taste buttery tho no butter has been added

ForLovingAquaSheep · 03/02/2025 20:23

Milk turns them to slop.

More butter than you think, cooked for less time than it appears or they end up dry

XenoBitch · 03/02/2025 20:27

I whisk both egg parts in a mug with a fork, with some milk and pepper. Then put in a saucepan with a tiny bit of butter for less than a minute. I like my scrambled egg wet.

BobnLen · 03/02/2025 20:29

In no particular order, I put small bit of butter, eggs, bit of milk, salt and pepper into the saucepan and stir it all up while cooking.

soupyspoon · 03/02/2025 20:29

Cream, eggs and butter, salt and white pepper mixed together, cooked very very slowly in a buttery frying pan, only until just done, then put on buttered toast.

Salt and pepper on top again, white pepper

You're welcome!

WingBingo · 03/02/2025 20:31

Definitely don’t need to add milk. You’re watering them down!

FinallyHere · 03/02/2025 20:32

However my 15 year old tells me that this is wrong and I should ...

I'd encourage the fifteen your old to show you how it's done. Including cleaning the kitchen before and after cooking.

win:win

Whisk eggs with salt and pepper, melt butter and when it foams add the eggs and stir until just done. Serve with smoked salmon and chives.

No milk EVER.

RosesAndHellebores · 03/02/2025 20:35

Melt a know of butter in a pan with a few twists of black pepper (white if you don't like the black bits).

Meanwhile whisk two eggs, and add to the warm pan. Add a pinch of salt. Stir until the eggs are scrambled then stir in a dessertspoon of Creme fraiche. If yiu have them, a few snips off the end of a bunch of chives. Stir again

Straight onto toast. No need to butter it because the butters in the eggs.

Enko · 03/02/2025 20:36

Here was I thinking this would be about if in a pot or the microwave....

familyissues12345 · 03/02/2025 20:37

Small amount of milk in the bottom of the pan, dollop of butter. Heat the milk, then add whisked eggs. Take off the heat before they are fully solid, very tasty!

Agree!

Butter in the pan, mix the eggs together, cook in pan. Don't beat them too hard, let them set a bit and move them around gently with a spatula.

Turn the heat off before they look completely cooked and keep stirring until they're done. If you don't turn the heat off when they're still a bit runny you overcook them and they go rubbery.

shellyleppard · 03/02/2025 20:40

I follow your husband's method but add salt and pepper before I cook, plus more pepper after

Keepsmiling2948 · 03/02/2025 20:40

I’m with your DH with the method. Except I don’t whisk the eggs I pop them straight into a cold pan with butter and sort of break them up and swirl them. Take off the heat when 75% cooked and the residual heat does the rest.

milk has absolutely no business being in scrambled eggs, that’s a crime!

Ponderingwindow · 03/02/2025 20:40

Bit of butter in a pan on low heat
mix the eggs. Add salt, pepper and nutmeg. (Possibly leave out the pepper for a child)
add eggs to pan and stir occasionally allowing large curds to form.
when it is still soft and wet, sprinkle in some cheese.

cook for a few more seconds and pull off while it is still wet, but everything is set.
eggs will finish cooking on the plate.

cheese and nutmeg are optional, but tasty.

Coconutter24 · 03/02/2025 20:43

Eggs, black pepper. Sometimes I beat them in a jug sometimes I just crack straight into a pan then beat.

CrispieCake · 03/02/2025 20:57

Crack eggs into a small saucepan, add a dash of milk, sprinkling of grated cheese and a twist of pepper. Whisk with a fork. Cook on a low heat, stirring very gently throughout.

I normally add either spinach and chopped tomato (at the start) or smoked salmon (at the end).

They are absolutely delicious.

Maddy70 · 03/02/2025 21:32

I crack eggs into a bowl add seasoning and someilk. Bung in microwave. Perfect

Hiccupsandteacups · 03/02/2025 21:35

I’m team husband. I like eggs and butter only.

im proper rebel and I just melt butter in pan and crack the eggs in whole and scramble as I cook. I like big chunks of white and yellow. I absolutely loathe with milk, it’s like some disgusting milky mush.

therattlebag23 · 03/02/2025 18:20

No milk - this is a hill I WILL die on. Plenty of butter in the pan, beat the eggs with salt and pepper, add to pan, take it off the heat well before you think they are done. Eggs should still be creamy.

This is the correct way and they are delicious.
However your version does sound quite interesting op.
Just wanted to check that when people talk about pans they all mean sauce pans and not frying pans.

Doggymummar · 03/02/2025 18:12

In the microwave with milk and butter

Me, too, but with olive oil and soya cream (bloody dairy intolerance!) I pause it when the outside has set and smoosh it all around again, put back in the microwave.

I like making them in a smallish container because it puffs up into a scrambled-egg cake 😋

BurntBroccoli · 03/02/2025 22:02

Break required eggs into a bowl. Beat with a fork and season with salt and pepper (and cheese if using).
Heat butter in pan on medium heat. Add eggs and stir with a wooden spoon till done.
