Silverside joint. Terrible reviews. How to cook

I've defrosted a medium beef roasting joint from Tesco. It's silverside 0.9kg.

The reviews are terrible - the worst I've seen for any product! The only successful ones are from slow cooker.

Anyone cooked this joint or thoughts on how long to cook it in SC and how much liquid?

I normally put about an inch of beef stock in the bottom and leave it on high for about 6 hours, turning every hour or so. Always comes out great.

I only really like sirloin as a roasting joint but it's so expensive.

The problem is people don’t know how to cook silverside. Everyone buys a ‘roasting joint’ from Tesco and just whacks it in the oven.

Silverside is great as a pot roast. Meaning cooked long and slow in stock, nearly covered. Look for pot roast recipes.

I always use my slow cooker from cold. Pint of boiling stock, herbs and a bit of wholegrain mustard. Leave for at least six hours

Sear the joint then wack it in the slow cooker on a bed of veg (few carrots, onion whatever) cover with beef stock and leave as long as you possibly can at the end add a cornflour water mix just to thicken the gravy.

Yes silverside is a long slow cook with liquid. You could put it in a slow cooker or low o en with a glass of red wine and some rich beef stock, maybe some carrots, shallots and porcini mushrooms, fresh herbs and garlic. Served with mash or dauphinoise potatoes.

I would normally slow cook with stock and wi e however it's not got much (any) fat then chunk it and cook like a casserole with carrots etc. Then serve with dumplings. Lush.

Fry off onions, carrots, parsnips etc. Brown the joint. Add some stock and cook for 4 hours or even longer in a low oven. Delicious.

Sear it in oil.
In a big casserole add a dash of oil, a chopped onion, 3/4 sliced Carrots, cut up medium turnip, bit of garlic, pop the joint on top and cover with beef stock. Salt, pepper and a bouquet garni. About 4 hours in a lowish oven. Serve like a roast with yorkies and horseradish.

Or:
Onion, garlic, tin of tomatoes, add the meat, salt, pepper, bayleaves and add a bottle of red wine and a tin of olives. Serve with veg and some really good quality tagliatelle or something bigger.

It's a great joint, slowly cooked.

Low and slow it’s delicious. I only roast sirloin, rib or fillet these days.

Try putting it in a roasting bag with a few veg or on its own,cook per instructions on bag box,about 20 mins before ready cut bag and drain juices off into a pot for gravy and let joint cook on a bit to get it browned more.This is good way of cooking tougher meat and doesn't take as long as a slow cooker.

Variations on pot-roast / slow cooked, low heat, long time and it will give good meat to carve cold for sandwiches as well as a very tasty dinner.
Venison similar, but often not tender enough for sandwiches.

I would roast as per label but in an inch of red wine and covered in tin foil. Turn over and foil off for last 15 mins. Keeps it moist and can have pink still.

I agree. I would not say silverside is a slow roast joint. That would be brisket to my mind. We do silverside or topside in the Ninja with the smart probe to medium rare. Leave it to rest for a good half hour or more and it's lovely every time.

It got 2.5 / 5 stars on Tesco site - the vast majority of people saying they binned it, couldn't eat it or gave it to the dog.

I guess ‘lovely’ is subjective though. One person’s ’lovely’ is another’s ‘would have been better slow roasted’.

In the slow cooker, add red wine or Guinness and a beef stock cube. Carrots and onions too.

I sear on the job then cook for 45 mins in the oven at 180. It's medium rare. I don't buy Tescos but I presume silverside is silverside. People often overcook beef

It was good in the slow cooker - tender and tasty - and I separated most of the fat from the juices and made a good gravy
I would buy it again if on special offer as it was at Christmas
