I'm a competent cook and usually enjoy it but I have an ASD older child and a young baby who doesn't sleep and I'm on the edge of what feels like a breakdown tbh. Please give me your very very easy dinner recipes that also have some semblance of nutritional value (this is for DH and me - baby isn't on solids yet and my older DC has an extremely limited diet). I'm talking things like pasta and jarred pesto with added frozen peas and sweetcorn stirred in. Things that use minimal pans and don't require too much chopping or prep. We don't have any particular dietary requirements.

I used to do a prawn and mango curry that was very easy. I made it vegan once for a friend by swapping prawns for butter beans.

It cooks in one pan and you can buy the garlic/ onion/ mango pre-chopped to really save time.

Basically heat oil, add a chopped garlic clove and chopped onion. Add prawns and add a chopped up mango. Add a table spoon of curry paste and a tin of coconut milk. Serve with microwave rice.

Also crispy cheesy chicken. One of my favourite lazy dinners.

Melt a tablespoon or 2 of butter in a pan and brush it over chicken breasts.

Scrunch up 3 packets of ready salted crisps to crush them and empty into a bowl. Add 125g of grated cheese. Mix it together with a couple of tablespoons of mixed herbs. Press this coating onto the chicken and pour any drizzle of the remaining butter over, then put a couple of shakes of smoked paprika over the top. Cook at 190 for 45 minutes. I usually do a tomato and red onion salad with it. Which only involves chopping up red onion and tomato with a bit of balsamic vinegar.

Also goes nicely with bagged salad or oven chips/ potato waffles. You can buy the cheese pre-grated and do potato waffles in the toaster. Or you could microwave bagged veg to be a bit healthier than me.

Easy penne all vodka (can make without vodka, and can use any other pasta shape, by which time it's a philosophical question whether it remains penne alla vodka). No claims to authenticity of any kind, only deliciousness.

For 2: half jar of soffritto passata. Pinch of dried chilli flakes. Single or double cream. Half standard pack of pasta of choice. Parmesan.

Heat pan, add dash of vodka if using and sizzle for a moment. Add passata and chilli and simmer for 10 minutes. Add dash of cream and simmer briefly. Meanwhile, cook pasta in well-salted water. Drain pasta and mix with sauce and grated parmesan.

Pasta with a sauce which is literally a couple of tins of mackerel in tomato sauce with some dried oregano sprinkled in. Cheese on top.

2 proteins, omega oils, tomato, herb and carbs. Takes seconds, filling and nutritious.

Soup maker is a great shout, with those packs of ready chopped veg, stock cube, bit of cooked chicken or whatever. The Lakeland one is good. They’re literally so easy and I’m well lazy 🤣
