What healthy yet comforting food are you eating?

This cold weather makes me want toast and bread but I'll pile in the lbs if I carry on.

What are you all eating that's healthy?

Orzo stew, pesto pasta, creamy mushrooms on toast.

Have a look at Hope Batchelor on tiktok (and maybe insta?) she was a masterchef contestant, now does videos on fridge raids and is really creative with ingredients. Lots of hearty, but really healthy food. She's fascinating!

I love making a cauliflower/pea/sweet potato curry, add lentils to bulk it out, my quick go to when I want a spicy dinner. As others have posted, I slow cook a lot at this time of year, easy and cheap home made soup is ham & lentil, I use a large pack of cooking bacon which only costs £2 max, lots of lentils, few potatoes, leeks, carrots (any veg really), veg stock. It's lovely and filling, normally have left overs too. I recently discovered lots of receipes on the British Heart Foundation website in case that helps. (why does cold weather make you want stodge/carbs/sugar, I could easily eat a jacket potato and cheese every day!)

I've lost over 2 stone since June, do the 16:8 fasting but boy am I struggling this week with the weather change!

I put a chicken casserole in the slow cooker packed with vegetables yesterday morning before work, dreamed of it all day and couldn't wait to get home to it. It completely lived up to expectations and would have been a hearty, healthy meal if I hadn't eaten all six dumplings I'd made too 😩

I roasted a tray of courgette, mushrooms, tomatoes and squash last night with salt and pepper, added butter beans and spinach. Microwaved it for lunch and had it with a jacket potato from the work canteen. (school, so the potato was free!)

It was warming and filling.

I just love stews as soon as the nights start drawing in. Nothing beats the smell when it's been in for a little while - even better if you're out somewhere and come back in to it!

The other day I roasted two heads of cauliflower, a chopped up savoy cabbage and a load of crispy kale and dressed it all with tahini sauce - absolutely delicious and very comforting!

Not filling, but I do enjoy a miso soup for comfort lots of umami. Last night was potato, cabbage and peas hash with sausage. Much higher on the calories front, but yum!

I am yet another one that has been cooking beef stew! I just chuck in a pack of lean diced beef, a pack of diced casserole veg, some barley, stock, wine and herbs into the instant pot and it's done in an hour. I probably make it every other week throughout winter as it's warm and comforting but also nutritious.

Other meals I've been having are:

Poached eggs and avocado on flatbreads with crispy chilli oil.

Porridge loaded with fruit, toasted nuts and seeds.

Ramen or stir fried spicy noodles.

Lentil daals or vegetable soups.

Fajitas with chickpeas and mixed beans for the filling.

Jacket potatoes.

Mixed bean chilli.
