Scones - do you use eggs in your recipe?

Use BBC's ultimate scones with jam and clotted cream recipe - preheat the tray and don't flour it. This works for me every time.

No, I've never added eggs.

SR flour, salt, baking powder. Rub in butter, stir in sugar. Mix with milk. I sometimes slosh a bit of vanilla essence in, but that's it.

Always use BBC Good food recipe which turns out brilliantly and doesn't use eggs. Have to eat the same day though!

Not sure on the egg issue but I know I hate them with baking powder or tartar in it, it makes my teeth feel strange.

I use a recipe that mixes one beaten egg with milk. It leaves a little which you can use to glaze the tops.

I had a recipe without eggs that was fine for decades. Then got a Mary Berry book recipe using eggs, they're the best scones ever, everyone raves about them, never make any other ones now. Gives such lightness whilst retaining the scone texture.

Conclusion: Scones can be made without eggs. Eggs in the dough may give scones a richer taste, but they don't make scones' texture lighter or softer. On the contrary, we enjoyed the egg-less scones more as they felt more delicate, and they literary melted in the mouth

I disagree, I do think eggs give them a lighter texture.

Most gorgeous scones ever were made for me by my grandmother (Nana) when I was a child sixty years ago. When anyone would praise their deliciousness, she would tap the side of her nose knowingly, declaring "well, there's an egg in it". Was a family saying for many years!!

Another one here who makes Mary Berry scones.
I bought her Fast Cakes and Complete Cook Book in 2003.
All of my friends were into Nigella and asked who the hell MB was!!

I use this Mary Berry recipe, mostly I leave out the dried fruit. People rave about them. Serve with clotted cream and jam and pot of tea, heaven on a plate.

I do it in the food processor instead of by hand, takes only a couple of minutes to make.

You can substitute buttermilk with milk 'soured' with a bit of lemon juice. Just google the proportions.

I don't always have the time or the inclination to bake, but now and then I'll throw some scones together. Be warned..... I don't use eggs or butter either. I use the three ingredient method. SR flour, Sprite or lemonade, and whipping cream. Folks they are gorgeous and so easy.

Obviously I am a heathen and missed the cookery lessons at school....

Posh scones for guests, I use an egg. (and sultanas)
Everyday scones for DH, no egg. (and no sultanas)
DH is not worthy of an egg.

No egg, as per Mrs Beaton's recipe.
Surely with eggs they're rock cakes.
I have a book of National Trust scone recipes which mostly have eggs, and wonder if that's why scones I have at National Trust properties taste so cakey and dry.
I get mine light through minimal handling once the milk is added, and a very hot oven.
