Easy family vegetarian meals?

I'm looking for recipe ideas and/or cookbook suggestions for easy family vegetarian meals. We're looking to eat at least two meat free meals a week and need some inspiration!
I have veggie chilli and bolognaise recipes already.

Hugh Fearnley-Whittingstall (sp?) book 'Veg' is good.

Suggestions in general: veg crumble, stuffed pancakes, primavera, biryani.

Vegetable lasagna with a cream sauce

Thai curry and rice, if your family like tofu then that goes well, or you could put in Quorn pieces

We like: stir fry veg with noodles, veg lasagne, veg pizza (buy the bases and do our own toppings), roast veg fajitas, macaroni cheese, veg curry with sweet pot, cauliflower and peppers, jacket potatoes with cheese and beans.

Taco's with beans instead of meat. Just from a package.

1 layer mashed potatoes, then a layer of baked leek mixed with pineapple, raisins and curry powder, layer of mashed potatoes, on and on and grated cheese on top and put it in the oven.

It's possibly a bit overdone/cliché, but roasted Mediterranean vegetables (pepper, courgette, mushroom or aubergine, cherry tomatoes) in a pan with garlic/extra virgin olive oil, served with seared halloumi and a slice of nice crusty sourdough. Really, really easy and very delicious.

For winter: macaroni cheese and a side of baked potato. I copy Pret's version and include kale.

Some kind of curry, I usually make two or three for variety and serve with basmati rice. At least one of them should be protein-based, like a daal or a chickpea curry.

Get the book The Green Roasting Tin then double everything if you’re feeding kids too.

General easy ideas:
soups
omelettes
veg sausage egg and chips/wedges
ratatouille with new potatoes or baked
any veg risotto (can adapt depending on family preference or what’s in season eg green veg, mushrooms and butternut squash, easy plain with just cheese and peas etc

Whatever you do, just make sure there's a vegetarian protein there somewhere so you feel full. I used to make a butternut squash curry that left me hungry, nowadays I add red split lentils for protein and it's much better, if not the authentic recipe.

Veggie curry is always tasty and a good option. There's a sweet potato one on the BBC good food website that we like.

Veggie stir fry is quick and easy. Also, egg fried rice.

Fajitas.

Not sure where this one came from but...

Mash potato and mix with cheese and either spinach/kale/shredded cooked cabbage/sautéed leeks. Spoon into a greased dish and use the back of a spoon to make a well or two in the mixture. Crack an egg into each well and sprinkle some milk/cream onto the egg plus more grated cheese.

Bake in the oven.

I’m veggie and we often all eat veggie to save cooking two meals. Lots of good ideas above but some of our faves are:

Egg fried rice with added veggies
“Green” Risotto - with whatever green vegetables I have in, some combo of broccoli, green beans, peas, asparagus etc
Quiche with new potatoes and salad (bonus points for making the quiche but can just buy one)
Vegetable curry - we do a lovely mild one (DS doesn’t like spicy) with cauliflower, chickpeas and potatoes. Served with rice or naan.
Fajitas with quorn
Pasta with a cream cheese and mushroom sauce

Burgers made with equal quantities of cooked brown rice, grated cheese and ground nuts. Mix together, season and add a bit of dried sage (or other herb of choice), shape into patties, dip in egg then breadcrumbs and shallow fry. Serve with a cheese or tomato sauce and veg, or chips and sweetcorn, or salad.

My kids loved them.

Veggie fajitas, this is how I make them, no quantities as I just chuck stuff in 😂
fry onions and peppers in a little oil with cumin, paprika, garlic granules and chilli powder to taste. When softened season and add tinned black beans/kidney beans/both, tinned sweetcorn and some lime juice. Add some small diced red pepper for crunch at end then serve with tortillas and guacamole/salsa/sour cream - or just Greek yoghurt!
Can also add a tin of tomatoes to make enchiladas, stuff then bake with grated cheese on top.
