Easy family vegetarian meals?

I'm looking for recipe ideas and/or cookbook suggestions for easy family vegetarian meals. We're looking to eat at least two meat free meals a week and need some inspiration!
I have veggie chilli and bolognaise recipes already.

(And despite the name of the site it's not cheese heavy, there's loads of variety.)

Another staple is to make up a burger mix (you can use the one in my PP or another of choice), shape into balls, pour over Yorkshire pudding batter and make Toad in the Hole - individual or a sharing one. You could do that in the Air Fryer if you have one.

I don't really like meat substitutes so tend to go for pulses and egg and cheese for protein but if you are then there's loads of options - pretty much every supermarket now has a veggie and vegan section!

My faves:

Probably already been suggested but dhal with rice and poppadoms always goes down well.

Tortilla (as in Spanish omelette, not doritos!). Cooked potatoes layered with cooked sliced veggies in a pan and covered with beaten egg, then cooked through on a low heat. Basically quiche without the pastry!

I make veggie bean burgers using any form of tinned bean (or chickpeas), mashed with thinly sliced fried onion and grated carrot and egg then rolled in flour and fried. Can also add grated cheese.

Glamorgan sausages are ridiculously easy if you have a food processor to whizz up the bread into crumbs and taste gorgeous!

Pad Thai with egg but no chicken.

All kinds of curry! Have a look in any Indian recipe book - a large part of the population is veggie so there's a lot of choice! If your family aren't into hot food just leave out the chilli.
