Does anyone have a tried and tested vegetable curry that doesn't involved chickpeas?

I love a curry and a love vegetables but have yet to make a vegetable curry that tastes nice. I tried a chickpea one once and didn't like the taste of chickpeas in it. I hardly eat any meat and would like to reduce it even further.

I went to a Hare Krishna event a couple of years ago and tasted the most amazing curry ever.

Any good recipes or tip? I've tried yellow lentil dahl as well and not keen on that.

Any help much appreciated.

Lots of goodies in there. I like the potato and cauliflower kofta with tomato sauce (not sure of the name in the book offhand).

I make a veg curry using pataks curry paste and putting in whatever vegetables I like (rather than following a recipe). Like you I'm not keen on lentils or chickpeas, but I think peppers, red onions, cauliflower, spinach and potato / sweet potato work really well. Plus a tin or two of tomatoes.

The Dishoom makhani sauce recipe is very good. And then add whatever veg you want and I often add a bit of dried fenugreek as well. I often make a paneer curry with it, so I pan roast paneer with a bit of coriander, cumin, tumeric, mustard seeds. Then add to sauce with any veg I have to hand for a few extra minutes before serving.

Paneer is the absolute gold standard of vegetarian curries and no one will ever persuade me otherwise. Make sure you fry it first (in cubes) so you get lovely crispy edges.

Otherwise, chunks of hefty veg like potatoes or mushrooms, again fried first to give them a bit of solidity, are a good call, though you'll probably also want a dal on the side for protein.

Cauliflower is your friend.

A really simple first step is coconut cauliflower curry with peppers

Pan fry onions, fresh chilli and cumin seeds, add peppers and cauliflower florets, once a little coloured add garlic finely chopped and korma paste after one minute add water to cover and a 50g creamed coconut sachet, simmer until desired softness of cauliflower. Add chopped coriander to finish.

Does it have to be vegetable or just vegetarian? If so, paneer curry is amazing. We make it toddler friendly by boiling cauliflower and hiding it in the sauce as an attempt to get some veg into her.

It's vegan and gluten free as long as the paste is - you can make your own paste and free in ice cube trays for future use

I make a lovely potato curry and usually add butternut squash and green beans, but you could use any veg really.

I make a sort of curry paste by whizzing up loads of ginger and garlic, then add harissa, cumin, garam masala, and turmeric. I fry that for a bit and add chopped onion, then added raw potato chopped fairly small. I add weak veg stock and let that simmer for 5 mins, then add butternut squash if using and simmer for another 10 mins. I add the green beans for the last few minutes, along with the solid part from a can of coconut milk, or sometimes I use creamed coconut block and fate that straight in. A squeeze of lime at the end and ideally some chopped coriander, delicious 😍

I haven't got a recipe we follow, just goes in pan and adjust taste with spices. DD really like dhahl - DH likes something to bite a bit, so she varies for him by adding potato/carrot chunks. Really like paneer as well in curry. I've never tried myself but my friend makes a red bean curry (ie kidney beans).

I love potato and spinach curry with baked gaic added. Delicious. I dont use a recipe but there are loads on the Internet. I'm not mad on chickpeas either.

I make a lovely vegetable curry from butternut squash, cauliflower and spinach. I roast the squash in chunks along with the cauliflower. Make the curry sauce in a pan on top (I make it myself, and sometimes add coconut milk, sometimes tomato, whatever I feel like) then wilt the spinach in and just a few mins before serving, stir in the squash and cauliflower. I had a 70s upbringing so love this with sliced orange (try it before you pull that face), brown rice and a poppadum.

I do my own recipe- onion, sweet potato, peppers, fry them together for 5 minutes. Add garam masala, curry powder then a tin of coconut milk and a tin of chopped tomatoes. Let it all cook together until the potato is soft. Add lots of spinach about ten minutes before the end. I then fry some halloumi and add it in )you can do paneer if worried about salt). I always add some cardamom pods and butter to my rice too. It’s not the fanciest but it’s tasty and freezes well.

As for me OP- I adore tofu so usually just do a tofu and onion curry with a jarred korma sauce. Blush

I make a fragrant aubergine curry with coconut milk. There’s lots of recipes online for similar ones, although mine is from a book by the restaurant Rasa. I’d imagine it’s pretty adaptable if you wanted to use courgettes or something instead too.
Also a fairly hot and pungent root veg one from Leiths Bible. Again, although it calls for particular veg, it’s adaptable to whatever you fancy/need to use up; I’ve made variations on it including just a potato one and one incorporating Brussels sprouts.
And Anna Jones has a delicious tamarind, butternut squash and coconut one, in one of her books but easy to find online.

How are you making the chick pea curry? Can you adapt it and remove the chick peas?

for tomato based veg curries pit a half teaspoon of black mustard seeds in hot oil first. Then add your veg and spices.
