What do you cook with chicken breast?

I always add chicken breast to my weekly shop and find that I'm cooking the same things over and over.
So what do you use chicken breast in? I need inspiration 😁

Chop into cubes and marinade in something tasty for a couple of hours then make kebabs with peppers / mushrooms / onion.

Slice horizontally and dip in egg then breadcrumbs and fry

chicken breast I find very easily dries up. much prefer buying chicken thighs or whole baby chickens.

Jamie oliver has some nice chicken breast recipes where he puts them in foil with various veggie and spice combos for quick meals.

Fajitas/enchiladas.

Fried with onion/garlic/mushrooms/broccoli, add stock, herbs and cream or creme fraiche and serve with pasta.

Egg fried rice- cube the chicken, fry to cook first, add whatever veg you have lurking in the fridge or frozen peas/sweetcorn. Add a pouch of cooked rice and a couple of scrambled eggs.

Stir fry with noodles.

Risotto.

Katsu curry

Pasta with chorizo, chilli pesto, spinach and some cream cheese

Udon noodles with beansprouts, onion, peppers, garlic, ginger and chilli, sesame oil and soy sauce

Fajitas

Whatever the recipe is, I cook the breasts whole in the airfryer then chop up for the recipe, much less dry.

Just as happily use chicken thigh/legs in the same way, however.

My go to is honey chilli chicken, but it's a pain in the butt to cook.

If you're feeling lazy, pour some soy sauce of them and bake.

Fajita's are good too

I usually get thighs instead of breasts. Kebabs, enchiladas, chicken pasta bake, stir fry or just popped in the over with some herbs are my go to’s at the moment. What do you do with yours?

Wrap them in Parma ham or bacon. Possibly stuffed with a little mozzarella. Serve with Parmemtier potatoes, salad, balsamic glaze and mayo.

Almost nothing! Chicken thighs all the way here - not only because they are less prone to drying out, but also because I will only buy free range chicken and the price of free range breasts is astronomical.

To actually answer the question, I'd do either schnitzel, kiev (kyiv) or katsu. I think they are the only dishes I've ever made that actually need breast rather than thigh meat.

I dont't buy Chicken breasts any more just thighs as I find them less dry and tastier.
I cook Indian, Thai, Korean, Mexican and loads more

Chicken and tarragon pie

Butterfly and flatten into an escalope, dip in flour, egg & panko crumb then pan fry for a few minutes each side in olive oil & butter until golden brown, just before serving add a handful of capers and a squeeze of lemon juice. Delicious!

I do similar, had it last night actually. Coat the breasts with a splodge of bbq sauce, cover with a couple of rashers of bacon then cover with grated cheese (I use low fat so I don't feel too guilty) and bake in the oven for about half an hour. The meat stays so tender and its very yummy. Made wedges in the air fryer and a little side salad, gorgeous. But definitely following for ideas!

Oh and another one, cut into chunks and marinade in honey (lots), soy sauce, chinese wine, seseme oil, cornflower, garlic and ginger and cook in the airfryer with roughly chopped mushrooms (takes about 20 mins) serve with rice. It was a recipe I saw once and do it quite often.

Tonight is chicken fajita pasta - cream cheese, veg stock and Cajun spice sauce over chicken breast, red onion and peppers stir fried with tagliatelle.

I add Italian seasoning and wrap in tin foil and cook in the oven. They do not dry out if wrapped in foil. They are very moist and tasty. We eat with roasties and veg.

Chicken escalopes- slice in half and use a meat hammer to make thin pieces and dip in flour,egg and panko breadcrumbs
then spray with oil and bake in the oven - used for chicken Katsu curry,

with spaghetti in tomato sauce topped off with mozzarella on the chicken for chicken parmigiana

Flatten and pan fry with lemon and herbs and slice up for use in a Caesar salad with anchovies

I usually use thighs, but breasts are nice marinaded for a few hours in a peri peri sauce, then cooked and put in ciabatta with salad.

Similar but season flour with salt, pepper, garlic powder and chilli and use freshly made breadcrumbs, serve with home made sweet chilli sauce (bought ones tend to have a lot of garlic). And I oven bake, spray oil on a tray put them on and spray a bit of oil over. Can also cut the chicken into fingers and do in goujon shapes, looks more as lots more pieces.

Very little actually, as zi use thighs in curries etc. I think they have more flavour. If I was doing something like chicken parmigiana, katsu curry, chicken Balmoral, chicken Kyiv, etc that required a breast to be whole, I buy them. Otherwise, thighs are tastier and cheaper.
