What do you cook with chicken breast?

I always add chicken breast to my weekly shop and find that I'm cooking the same things over and over.
So what do you use chicken breast in? I need inspiration 😁

Chop it into bite sized pieces and cover the bottom of a large oven proof dish. Dollop on a jar of salsa and a jar of sour cream. Crush a large bag of Doritos and sprinkle on top, cover with grated cheese and bake in the oven.
Serve with salad.

Risotto, curries, stir fries, tray bakes, casseroles, chicken carbonara, bbq chicken, hunters chicken or sometimes just roasted and sliced with gravy although when doing breasts I wrap in foil to avoid them drying out.

Split in half, stuff with Gorgonzola and wrap in pancetta. Roast and serve with a white wine, mustard and creme fraiche sauce

Tonight i'm having chicken breast sprinkled with Cajun spice mix then grilled, served with potatoes wedges and roasted broccoli.
We also use chicken in:
Curry (Indian and Thai)
Fajitas
Arrabiata pasta
Risotto with asparagus
Honey sesame stir fry
Butter pasta with broccoli
Jambalaya
Stir fry using a packet sauce
Cacciatore

Grilled then left to go cold and chuck in a salad with some balsamic dressing or vinaigrette

I got in the habit of buying them every week too and eventually ran out of things to cook so I shall be watching and reading. I mainly make curry, chicken kebabs, hunters chicken and stir fry but I find breast meat can be quite dry if not in a sauce, thigh meat is better but I rarely find it off the bone in supermarkets as it’s become more popular. I can’t be bothered to take it off the bone as raw chicken gives me the ick.

Fajitas, enchiladas, hunters chicken and anything in one of those cook in the bag/spice mixes by Maggi. And when in need of comfort food, chicken stew and dumplings.

Are you in the UK? Chicken thigh fillets (ie - skinned and boned) are readily available in all the main supermarkets!

I am, but rarely find them, I shop in Tesco, Lidl, Aldi and online at Ocado and struggle to get them.

Stick it (chopped a bit) into a Remoska (or a lidded saucepan) - add garlic paste, tomato paste, harissa, pesto, bouillon powder (if you like) and a tin of tomatoes. Then chuck in a few handfuls of some sort of pasta and set it all simmering. You can also add courgette, asparagus or some other vegetable. It's a whole meal in a pan for very little effort. I do find myself eating it rather a lot, and as I live alone it lasts quite a while!

Chicken in air fryer,toms and peppers and a bit of salsa in frying pan to soften,par boiled wee tatties finished in air fryer.. easy as F.😋

Brilliant thread! Am so uninspired atm, or I was!
my kids love Korean fried chicken or Katsu sauce. Or wraps.
i like covering it in herbs, tomatoes or Passata, and cheese.

Spicy blackened chicken and rice.

Cut chicken into bite-sized pieces. Put a couple of tablespoons of your curry paste of choice, two really good squirts of garlic puree (or more, or less depending on how much you like garlic) and a good squirt of tomato puree into a bowl, mix, and add the chicken. Marinate for a few hours if you can. Cut two or three onions into wedges. Heat some oil in a pan, chuck in the onions and fry over a high heat until they start to go black. Then push them to the side of the pan and add some of the chicken, sear on all sides, then push to the side and add more chicken, repeat searing until all chicken is in the pan and seared. Stir it all together, and put the (pre-washed white) rice on to cook (for me, 9 minutes in my microwave rice steamer). Continue to cook the chicken and onion over the high heat, stirring frequently, so that you get a really good amount of caramelisation. Serve!

I gave up on them and now get a tasty whole large chicken. I cook it and cool it. Then I get sliced meats from the breast for roast and sandwiches. DH like a chicken leg for a snack, then anything that’s left gets stripped off the carcass and added to a Chinese sauce with a stir fry of crunchy veg. And after that if there’s anything left the dog gets the final meaty bits.
