Vegan gluten free curry for a crowd

Hello, has anyone got a delicious curry recipe that I can make in a big pot in advance of an event and then heat up on the stove just before serving?
I'm also making a lentil Dal so maybe something not lentil based to compliment this. For 15 people. I will serve with rice.

Any allergies? If not then do a sweet potato and peanut butter curry, there are lots of (identical) recipes online.

Chickpea, sweet potato and spinach.

Make the base as usual (including softening the large amount of onions until they darken, tomatoes and tomato puree), add in sweet potato chunks, microwaved to nearly cooked if time is a problem, then rinsed chickpeas from a tin along with coriander stalks, as it's bubbling like a volcano crater, stir in a couple of blobs of tamarind paste for the sweet-sour, then some thinly sliced fresh chilli, let it bubble, then bag of spinach on top with coriander leaves, stir, put the lid on, turn off the heat and leave it until it's time to serve.

Can also be done with Butternut Squash, Pumpkin or normal potatoes (but I'd parboil halved/quartered potatoes in water with a teaspoon of Turmeric to give more flavour and a bright yellow colour for the latter).

Ottolenghi's confit tandoori chickpeas are very simple and taste outstanding recipe here I imagine it could only benefit from being made in advance and reheated - although I never get chance because the whole lot gets scoffed whenever I make it.

I don't have a tried and tested recipe, but potato and spinach would be good, then you've got good variety and contrast.

If you use something like sweet potato or butternut squash, cut it into cubes and roast it in the oven before adding to your curry.

I'm going to guess some of the spinach and potato curry recipes use ghee, which isn't vegan.

I can testify that 2 tablespoons were indeed remaining after I last made this, and were even better the next day.

On a tangent these naan breads in Aldi are terrific. The size of hand towels and really authentic. They tend to be in the bread section, rather than with the rice and curry sauces.

Cauliflower and potato! Just google aloo gobi! It tastes even better after it’s been sitting and it goes amazing with dhal and rice.

But that's my point. It doesn't need vegan in the title, it's 'othering' vegan food as if it's a special category of food that's only attractive to vegans, rather than being normal food that everyone would eat.

They can just say in the ingredients - use ghee or oil if preferred.

You can get vegetable ghee, although it's made up of palm oil and isnt really the same, or just use vegetable oil.
