Have gone non-traditional

Slow roast persian lamb with pomegranate salad and baby roast potatoes.

Having my lamb today as we are away next weekend.

Just put pork in but serving with salads, really not feeling like doing anything complicated

We've got covid and not eaten since wednesday so himself is just making His Mash, I've had to show him how to use my potato ricer. And I'm having mine with a little cheese, a couple of veggie cocktail sausages and a little gravy. Can't wait.

We had ours at lunchtime and had

then the leftover chicken will become lunches and some will go in with pesto pasta on Tuesday night when we need a quick easy tea!

We had homemade shepherds pie with peas, runner beans and roasted parsnips. Cba to do a roast 🙄
Next Sunday will be roast lamb and all the traditional trimmings.

The plan was roast pork with all the trimmings...............but we are all feeling under the weather with a nasty cold so I've made tomato soup!

Chicken, coleslaw, corn on the cob, hasselback Potato's. It feels too nice and sunny for a proper roast for me today.

Chicken, stuffing, green beans, carrots, cabbage and potatoes xx should be ready soon 😋

I have a lovely looking pork joint with cracking in the fridge but after spending all night in a&e with a kidney stone and UTI I don’t think I’ll get round to making it today. Feeling quite gutted about that!

Had lamb. I think because I'd mentioned about having it next week for Easter Sunday - DH was "inspired", went to Lidl and got some for today. So it looks like having not had it for probably at least a year we are having it two weeks in a row!

It was actually very nice and I enjoyed stabbing it with a big knife to put garlic and rosemary in the holes.

Slow cooked lamb in a white wine and beef stock with cauliflower cheese, honey roasted parsnips and carrots, roast potatoes and peas. I'll see if I can be bothered to make Yorkshire puddings. Currently relaxing with a glass of red 🍷, whilst middle child and I watch Lord of the Rings Two Towers

Almost the same here, except I have a beetroot in with the roasted veg and a packet of sugar snap peas, tenderstem brocoli and carrots instead of peas.

Not having a roast here :)
