Maple syrup

I recently bought a bottle for a recipe but had forgotten how stunning maple syrup actually is. Save drinking it directly from the bottle, does anyone have any really good recipes? I'm partial to a savory/sweet combo so not just desserts!

surely googling recipes with maple syrup would have loads!!

I LOVE Crumpets! Unfortunately I can't eat them (unless blindfolded! 🙈) because I have Trypophobia, I'm sure they're amazing with Maple Syrup because even just with butter they're divine 🙁

I'm Canadian and me and my son have this game where we challenge each other to find anything that can't be made better with maple syrup. I can pretty much always find a way to make it work - except for humous and some delicate fish meat

I use it for baking ham (though admittedly not as liberally as @gemmaschewtoy)!

I also use it for roasting veg. Not just butternut squash but also parsnips, sweet potato and carrots.

Porridge with blueberries and maple syrup is one of my favourite winter breakfasts and I also use maple syrup when making flapjacks.

I’m not particularly imaginative with it, but I completely agree it is probably the single best food in existence. There is nothing more disappointing than being at a breakfast buffet, finding a lovely jug of golden brown syrup, drowning your pancakes in it and then finding it’s cheap honey rather than maple syrup.

I make maple syrup granola.
Oats
Nuts
Dried fruit of your choice
Loads of maple syrup to make it wet and sticky
Oven at 160 til it goes golden

I have Greek yogurt, hot appple and blackberry and granola on top food of the gods.
But works with any fruit and Greek yogurt.

I love it, don't buy it often as I end up putting it on everything 🤣 not even a fan of sweet stuff really but it hits different. My favourite is mixed into porridge with berries though I think.

Maple whipped cream to serve with, quite frankly lots of things, but particularly good with apple pie.

My daughter loves flapjacks with some maple syrup in them.

I usually drink my coffee black and unsweetened, but occasionally, I'll use a teaspoon of maple syrup in it, usually if I'm ill.

@Fifthtimelucky this might be an interesting north/south divide, are you from the south? The only reason I say this is because I listen to the podcast Dish which has Nick Grimshaw interviewing with Angela Hartnett cooking for the guests. There was a conversation about being warned of dry food in the south; that northerners put lashings of gravy on things, plate swimming in it whereas southerners mainly put less gravy on so "drier" food. So maybe being northern I am used to using glazes as sauces for meals or gravy for roast dinner, and we do use lots.

My maple mustard glaze has some red wine vinegar to cut through the sweetness and wholegrain for heat and a balance to the sweetness, there is also brown sugar in it. It is a lovely combination and we pour the glaze out of the dish into a gravy jug to pour over the ham on our plates. I had never really thought about it, I just don't like a glaze being on a tiny portion of the ham.

Anyway, in answer to a question about where to buy 'decent' maple syrup.

We had Canadian relatives come and visit. They gifted us a bottle of what they described as the good stuff. Tasted exactly the same as the maple syrup I buy out of Aldi!

Yes I'm southern!

When I cook a ham, the maple syrup is a glaze for the meat rather than the main sauce because I always serve ham with parsley sauce.

I love a good gravy made properly from meat juices but I used to hate the brown gloop that used to be served at school. That put me off gravy for ages and I only ever used to eat gravy at home.

Personally, I only ever serve gravy with a roast. It seems odd to me to serve it with something like sausages, which I know some people do. Perhaps that's where the north/south divide is?

For what it's worth, I know two people who absolutely drown their food in gravy. One is from the south and one is from the north. I know only one person who likes their food completely dry. He is from the south (but is also extremely fussy about food in many ways).

Use it instead of honey in salad dressings.

Lime, maple syrup, chillis, white wine vinegar, shake it up and fresh coriander and roasted peanuts - put over coleslaw veg for a Thai-ish dressing.

I buy the coop maple syrup - it's nice.

Also on French Toast.

Or in Greek yoghurt.
