What's for dinner - the lazy version

I am not feeling too good today. Just low and overwhelmed by life stresses.

I am at a loss as to what to cook for dinner. I am coeliac so it has to be wheat and gluten free. We have had chicken almost every day lately. Dcs are 14 and 12 but generally eat very plainly due to autism and sensory issues.

I'd really love easy peasy no fuss dinner suggestions.

At present I am thinking saying fuck it and just getting Dominos. (For the Dcs, not me).

Ideas very welcome.

We are having a risotto but if I am home but ill then I might do something like a baked potato with beans and a bit of cheese on top, it is filling at least.

I like pasta and veg (peas, brocoli, etc from the freezer) boiled up together with grated cheddar, butter, salt and pepper. Or with pesto.

How are they with sauces? I did a quick stir-fry last night with whatever veg needed using and served it on rice.

I love jacket potatoes! I put olive oil, butter, salt, pepper and oregano on them and then put them in the oven for 1 hour, so good. Tuna mayo, prawn mayo, beans & cheese. With a little side salad of cucumber, green salad leafs and beatroot.

Patatas bravas perhaps? Chop potato into chunks, roast in olive oil, and make a sauce from tomato, chilli, gluten free mayo, a dash of honey, garlic, onion, paprika, some thyme

Sausages and wedges (home made) in the oven.

Or you could do it as a tray bake of cubed potatoes, onions, peppers and sausages together.

@lilacsunbeam I haven't tried the oregano on baked potatoes, I had a Greek flatmate at uni who used to make oregano chips and they were so nice, I will have to try your suggestion!

I have cold rice leftover in the fridge so I'm thinking I'll make an egg fried rice with.... well at this point it might just be rice for dinner

Will they eat curry?

Super simple basic curry using cubed pork, lamb, beef (if avoiding chicken) browned, add onion chopped finely, 1/2 jar curry paste (we like jalfrazi), 1/2 can chopped tomatoes (freeze other half), 1/2 can water and a stock cube. Add chopped coriander at the end. For extra labour saving use frozen chopped onion. Serve with rice, gluten free Indian bread (is chickpea flour gf?)

My autistic dc was super fussy in some respects but loves spice, thankfully from 14 it got easier and now they eat ok, still picky but can tolerate things they don't like on the plate a push to one side and will eat mushroom risotto every day by choice

Pasta & sauce (from a jar)
Chicken curry made with a ready made paste & a tin of tomatoes or coconut milk

Curries can be a bit of a problem. But I have found that if I tell my 14 year old that chicken korma is 'chicken in a creamy yellow sauce' it passes muster. I'll buy some jars in I think. Great standby.

@bobomomo - yes things are indeed getting easier now lately I have realised. In the summer they branched out to moules and frites! I think Aldi sell those in their chiller section actually now I think about it.... I'll get some of those in also.

I am feeling much more optimistic now, thank you everyone!

Really easy and quick - and even my 6 year old loves it. I don’t use any chilli sauce when she is eating it, just a little more soy and a pinch of 5 spice powder. And then sliced chillies for DH and me when serving.

I'm doing cod wrapped in pancetta with red pesto (I make loads and freeze in ice cube trays). With serve with green beans, broccoli and roasted baby potatoes. About 3 mins hands on time.

DS is quite a plain eater and some quick easy things I do for him are

Plain pasta with chicken and cheese. Add whichever veg they like (His is cauliflower so its the blandest looking plate ever but he loves it)
Egg fried rice with brocolli and cauliflower. He loves soy sauce so it's less bland looking. Add whatever meat you have. DS's fav is the ham left from Sunday dinner
Easy dinner of Gammon steaks, asda ready mash (the only mash he likes) veg and gravy.

Chicken wraps with bacon and cheese.
Sausage chips and eggs (in fact any of the old style 'council estate' dinners so fish fingers mash and beans/pie and chips/egg and chips etc but I don't do chips often)
And the crappiest dinner that he would eat every day if he could..... supernoodles and chicken nuggets.
