What's for dinner - the lazy version

I am not feeling too good today. Just low and overwhelmed by life stresses.

I am at a loss as to what to cook for dinner. I am coeliac so it has to be wheat and gluten free. We have had chicken almost every day lately. Dcs are 14 and 12 but generally eat very plainly due to autism and sensory issues.

I'd really love easy peasy no fuss dinner suggestions.

At present I am thinking saying fuck it and just getting Dominos. (For the Dcs, not me).

Ideas very welcome.

I am glad. When he was younger he asked me what was for dinner. Chicken stew. 'I HATE stew' he said. I asked him what his stance on chicken casserole was. He's alright with casserole.

Thank you again. Tonight will be jacket potatoes with beans and cheese, sweet corn and peas and garlic bread.

I went out and bought a solid amount of jars and moules frites and nice sausages and wraps and taco shells.

I am a total foodie so usually try and cook things from scratch every day and write meal plans and listen to the most ridiculous amount of cooking blogs on you tube. Today i need bellies to be filled and happy and maybe for the next week or so as well. @NisekoWhistler mentioned cheese toasties and @dancinginthewind tinned soup. My favourite Sunday supper growing up was Heinz tomato soup and cheese toasties..... I forsee this in my [immediate] future. I am trying to ward off a bout of depression (I feel it coming) and I think a week or so of good solid no fuss meals will really help. I put too much stress on myself!

I feel your pain as I’m feeling like this too today. Inspired by this thread I am going to have a jacket potato with cheese and beans and will bung a pizza and garlic bread in for my DD (she also has sensory issues but this thread has given me a bit of hope that things might get a bit easier the older she gets - she’s 11 and can’t do sauces so it does make things a bit tricky and repetitive!).

Hope all those that are feeling fragile today, take it easy and tomorrow brings a better day.

My Lidl (usual supermarket) haven't had gluten free sausages for a while, but had have g-f sausage-meat over Christmas so I bought several and bunged them in the freezer. Today I took one out and am going to have sausage-meatballs (baked) with scrambled egg, though obviously they'd make excellent sausage and mash.

Yesterday I had flat mushrooms filled with mixed chopped cooking apple and grated cheese, topped with pancetta, all cooked in the oven. Previous day, frankfurters cooked with onion, tomato (some fresh, some concentrated puree) and red peppers out of a jar with dried thyme and oregano, served with much broccoli. They'd have been fine with g-f pasta (I'm lucky enough to be able to eat spelt pasta which tastes good - the best other g-f pasta I had was made from buckwheat).

A classic quick & easy M&S dinner

We have haddock kyivs (highly recommend) in the fridge so will pop those in the oven along with boiling some baby potatoes and steaming some veg. Lots of butter for the potatoes 🤩

Jacket potato is a go to for me when I've no energy. 6 minutes in microwave.. 6 minutes in airfryer to crisp the skin.
Tuna mayo or
Cheese and beans.
Or cheese and coleslaw.
Chili if I've some I've batched cooked in freezer.

I should rename the thread. 'The Lazy version' is self judgemental. I mean the 'Tired version' really.

Gnocchi baked in a simple sauce (passata, coconut milk, tomato puree, dried herbs, and chili flakes). Topped with mozzarella and dots of pesto before it's baked.

Takes minutes to make and is very tasty, plus I nearly always have the ingredients in.

I chucked frozen chicken kievs and chips in the air fryer and served with a tin of beans.

It was either that or get a chippie.

DH is making sweet & sour halloumi curry from pinch of nom. However I’m tired, pre menstrual which is disappointing as means TTC didn’t happen this cycle and all I want is one of these simple meals. Sausage, egg & chips would be great but get fit & lose weight is the aim at the moment.

For an easy meal guaranteed to win over my tired, fussy eating, gluten free 10 year old, I would go bacon omelette and home made potato wedges, with lots of ketchup and a side salad of raw carrot and cucumber. In fact I quite fancy that now...

I ordered cooked from scratch a Thai red curry, chicken and prawn dumplings and rice.

tbf been feeling very unwell since morning and just can't seem to get out of bed.

Baked salmon is so easy. Just wrap however many salmon fillets you need in tin foil with slices of lemon, lazy garlic and some herbs if you want.

Serve it with veg, potatoes done whichever way you prefer, and some creme fraiche or sour cream

Egg fried rice is a good one, only you do need to cook the rice in advance. Then it takes 5 minutes - stir in one or two eggs, some peas and sweetcorn, bingo.
A favourite of my Gdcs - and nice and quick when they’re starving.

We had ‘I’m not cooking, so eat whatever leftovers you find in the fridge’. Dc had chips in the air fryer and a packet of sugar snap peas. Dh and I had day 3 of leftover roast, which was roast mutton leg, roast potatoes and cauliflower cheese, quite nice actually!

Our easy dinners are often jackets with tuna mayo or cheese and beans, fried eggs on toast (sometimes with a hash brown), or cheese quesadillas.

Leftover lasagne with a mixed salad of lettuce, tomato, onion, avocado, green lentils, red pepper, white cabbage. And my homemade honey and mustard dressing

No good for you all but Dh has made meatballs and him and ds made the pasta to go with it! It’s been a labour of love but they enjoy cooking. I’ve been told they’ve even made a focaccia to go with it. But I’m hungry and they’re taking a long time about it 😂

We had butter chicken. Using a jar of Pataks sauce. I sautéed onions & a red pepper, added chopped chicken & thr sauce. Threw in some frozen peas. Simmered that for 30mins. Cooked jasmine rice in the rice cooker & heated some naan bread in the oven.

Served with coriander & mango chutney. It was easy, fast & v tasty.

I like to buy a whole roast chicken. It's already cooked, so no effort required there. Can go low effort with the veg and potatoes and have bisto gravy.

Then strip the rest of the chicken to use the next day in a curry or risotto.
