I've discovered puff pastry and it's making me happy

So as the title states, I've just got on the wit of puff pastry and I'm loving it! Today I made jambons, sausage rolls and last week I used them to make chocolate twirly things. I love how easy it is and the kids enjoy the results. I'm at a loss as to what else ( easy ) I can make with it. Have you any exciting recipes?

Bacon and cheese turnovers . A diamond shape of pastry . Across the half way line a slice of tomato, a rasher of bacon and a sprinkle of grated cheese . Bring up two
of the opposite corners to meet in the middle , leaving the ends open .

We often have puff pastry with a casserole instead of potatoes. We cut it into rectangles about 5”x2” - yummy with plenty of gravy

Agreed.

Basically any combination of meat and/or veg is elevated to fine dining by topping it with puff pastry and calling it a pie. In my opinion.

Leftover beef stew? Top with puff, it's a steak and ale pie.

Leftover chicken curry? Puff, it's a pie.

Got vegetarians coming round? Stew some squash/pumpkin, mushrooms, onions, bit of garlic - puff - pie!

Also you can use a smaller dish, cut an animal shape into your puff, and suddenly you have a kid's pie.

We made mincemeat pinwheels last Christmas (the sweet kind not beef)
Also really easy tarts, fork prick the middle add pesto then whatever veg topping, maybe ham, prosciutto olives etc some cheese on top and bake , I like pear walnut and stilton (no pesto), or Passata with olives, prosciutto and manchego , DH likes pesto with Parma ham, mozzarella and sun dried tomatoes. You can put anything on them, we have even made sweet ones with Nutella and pears/bananas

Traybake pies!

Put a a sheet of ready made puff pastry halfway on a baking tray. Put a mound of filling in the middle. Paint a bit of water 1" around the edge. Fold the other half over the top and gently press to seal the edges. Poke a couple of holes in the top for steam and give it an egg wash if you like, then bake in a hot oven for 20-25 minutes.

My favourite fillings are broccoli and blue cheese, mushrooms with thyme and sour cream, curry spiced cauliflower or spinach with feta and fresh mint.

You cook the veg until just tender, drain very well and mix the other flavours before putting them on the pastry. You don't want it too wet or you gwt a soggy pie.

We have them with a bitter salad on the side to cut through the richness of the pie.

Cheese pasties-mix ricotta, grated cheddar and Parmesan, grate nutmeg and add softened onion if you like. Cut pastry into squares and put a dollop of mixture in one half-fold over half to make triangle, glaze with egg or milk and bake for 20 minutes!

ooh I have some puff in the freezer… marking for ideas

I usually make a tart with some kind of veg & some kind of cheese, my go tos are

tomato and mascarpone with sun dried tomato pesto mixed in
leek and goats cheese
roasted butternut and goats cheese
mushrooms and taleggio

all with a base of creme fraiche or cream cheese, and pine nuts and herbs sprinkled on top, maybe lardons too

half bake the puff before the toppings go on

Vol au vents! Perfect for parties or Christmas too. Make the filling before hand and you will have a quick thing to whip up for canapés. Unfortunately I'm not posh enough to do this in my personal life but I used to make them when I worked as a baker and they always went down well.

I absolutely love puff pastry tarts as others have said. Spread a sheet of pastry with pesto or passata, top with cheese and whatever else you have in the fridge and bake it in the oven.

I use ready rolled puff for Christmas sausage rolls. Take some sausages out of their skins and mix the sausage meat with a pack of sage and onion stuffing (made with half the amount of water as stated on the packet.) Spread the pastry with cranberry sauce, mustard or chutney and fill with the sausage and stuffing mix. Roll up, egg wash and bake.

I also make cheat's cheese and onion pasties. A tin of new potatoes cut into halves, two large onions softened, one block of cheese grated and one beaten egg. Mix everything together with salt and pepper and use as a pie/pasty filling (it fills two sheets of pastry. I normally use a bowl to cut circles of pastry, put the filling in half then just fold over and crimp the edges, egg wash etc.

I'm gonna try biscoff crunchy spread and make some wee mince pie type parcels for my hubby who hates actual mince pies lol
