I've discovered puff pastry and it's making me happy

So as the title states, I've just got on the wit of puff pastry and I'm loving it! Today I made jambons, sausage rolls and last week I used them to make chocolate twirly things. I love how easy it is and the kids enjoy the results. I'm at a loss as to what else ( easy ) I can make with it. Have you any exciting recipes?

I absolutely love puff pastry tarts as others have said. Spread a sheet of pastry with pesto or passata, top with cheese and whatever else you have in the fridge and bake it in the oven.

I use ready rolled puff for Christmas sausage rolls. Take some sausages out of their skins and mix the sausage meat with a pack of sage and onion stuffing (made with half the amount of water as stated on the packet.) Spread the pastry with cranberry sauce, mustard or chutney and fill with the sausage and stuffing mix. Roll up, egg wash and bake.

I also make cheat's cheese and onion pasties. A tin of new potatoes cut into halves, two large onions softened, one block of cheese grated and one beaten egg. Mix everything together with salt and pepper and use as a pie/pasty filling (it fills two sheets of pastry. I normally use a bowl to cut circles of pastry, put the filling in half then just fold over and crimp the edges, egg wash etc.

Oh Christmas sausage rolls sound delish! I'm try that for sure

Delia does a great veggie sausage roll recipe too. She says flakey but could use puff.

I've made successful giant sausage rolls using the whole length of puff pastry but cut off the extra so it doesn't overlap too much at the joints

Then fill with 450g of the whole portion of sausage meat you buy

Cook for 30 mins or so

Then slice like a beef wellington

Pastry tarts are a good easy tea here - spread the base with either cream cheese or pesto, grated cheese and then whatever other toppings you fancy, sliced mushrooms and peppers, goat's cheese, crumbled crispy bacon. Delish.

We usually use up the leftovers making cheese twists, but lots of good ideas on here

Bacon and cheese turnover, I know someone put this above but wasn't the best recipe for them imo. Cut you pastry into squares roughly 20cm square. Smear a diagonal line (about a tbs) of cream cheese with mustard stired in. Lay bacon (2 rashers of streaky is my fave) abd a generous handful of grated cheese on top of the cream cheese. Fold the two naked corners across and press together with water. Bake until the cheese is browning.

Save a bit of the really fine dust from the packet of stuffing and sprinkle on top of the sausage rolls after you egg wash and before baking 😋.

I can't seem to find ready made puff pastry with butter easily any more and I really don't enjoy the palm oil version, so I make my own. I use this recipe, it is easy and you can freeze it. It is delicious.

I like the baked Camembert in puff which I got out of Nigel S quick cooking. Although he uses frozen and so do I..

DDs favourites are

  • cheese straws, roll out a rectangle, brush tomato ketchup on and sprinkle lots of grated cheese. Another layer of pasty on top, cut into straws then give them a little twist, brush with milk or beaten egg and bake.
  • pastry parcels, cut squares, blob of jam/lemoncurd/biscoff/nutella then fold so it's a triangle shape, brush with egg and sprinkle of Demerara sugar then bake
  • roll a rectangle, make a paste of butter, sugar and cinnamon, brush all over the rectangle, roll it up, slice into rounds and bake, for little cinnamon roll flavoured crispy biscuits.

I love pastry Smile. Lots of savoury ideas here. I discovered the following this year when doing an Easter family lunch, it was a surprise success:

Rectangle of puff pastry. Score a border with a knife. Brush the rest with apricot jam. Whack in a piece of rolled out marzipan the same size as inside the border. Then top with tinned apricot halves at equal intervals. Brush over more apricot jam. Brush pastry border with egg or milk. Bake for about 20 mins. Serve with cream. Lovely

“Cheating” salmon en croute. I defrost frozen salmon fillets and some frozen spinach mixed with crushed garlic, squeeze excess water out of spinach, put on top of salmon, wrap in pastry and pop in oven for 20 mins. Not as good as proper ones but kids love it.

You can cut it into squares and put it into your sandwich toaster. Add some stewed apple and a little custard and top with another sheet of pastry. Makes lovely apple turnovers.

A summer recipe I’ve tried and always goes down well is Boursin and asparagus parcels. Like the others above, a square of puff pastry, chunk of Boursin in the middle and 2 or 3 asparagus spears diagonally across, fold over side corners and stick down.

Also cheese and bacon straws…cover a sheet of puff pastry with grated cheese (any sort) and roll it in, then top with rashers of bacon. Cut into strips (twist if you like) and bake. Easy canapés and very popular.

On the pie theme, roast vegetables topped with Boursin (or crème fraiche and grated Gruyère) along the middle of a sheet of puff pastry and either bring the sides up to cover or - if you’re feeling fancy - plait the sides over, brush with egg wash and bake.

Sauté leeks and crushed garlic and add diced chicken breast, mushrooms, boiled potatoes and carrots (diced) season and cook it all up with salt/pepper and add a good dollop of whole grain mustard. Add some herbs if you like. Make a white sauce and chuck this. Put this mix into a pie dish and add a sheet of puff pastry on top.
