What's for dinner?

I am on holiday so planning loads of nice meals, and more than one course which is really only a holiday or weekend thing for us.

Tonight we are having;

Salad with pear, walnuts and blue cheese

Chicken and rice soup with dill and lemon

apple crumble and custard

Hoping for some ideas from others which I can plan as well!

Hope you enjoy@Willmafrockfit .We probably do one SimplyCook meal a week,maybe on a Thursday if I've had a long day but fancy something nice and not too taxing.The recipes are simple enough for my 14 year old to follow too,so on a Fri or Sat night,he might do a bit of a fakeaway dish like Black bean chicken or a curry which I prefer to an overpriced takeaway and he enjoys the cooking practice,so we like to do that.

We are doing a mini Xmas dinner and will include a plate for my elderly neighbour. She had an 'M&S Turkey Dinner for one' on Christmas day as we were out for the day and was not impressed with it.
So Mini Turkey roast, gammon ham, stuffing, Pigs in Blankets, roast potatoes, lots of Veg and gravy with a boozy trifle to follow for dessert. 😋

We have a nice NYE dinner planned at home.

Starter is a caramelised onion and cheese puff pastry tart with winter herb salad.

Main is beef wellington, mash, truffled cabbage, with a Madeira sauce.

Dessert is sticky ginger cake with poached pear, caramel mousse, and candied walnuts.

Coffee and truffles if we have room.

Best thing is it’s all from a local restaurant so all I have to do is place everything in the oven and plate up.

I'm going out for a meal with DH tonight to our favourite restaurant so at lunch time it's just homemade vegetable soup DH made and a slice of wholemeal bread. It is delicious though.

These NYE dinner plans sounded absolutely gorgeous!

Today I am using up the last of the ham and making a creamy chicken and ham casserole (basically just the pie filling) which i serve with mashed potato and then will also try and finish off the brussel sprouts and broccoli which are both at the end of their lifespan.

But for now... NYD breakfast. I have a hankering for a Greek-inspired breakfast of avocado, tomato, cucumbers, black olives and halloumi with yoghurt and honey.

I'm making a vegetarian Tex Mex lasagne for dinner tonight.

Basically the same as a lasagne other than it's three bean chilli instead of Bolognese and wholemeal tortilla wraps instead of pasta.

We had friends round for roast chicken, sausages and all the lovely veg, and I used up some single cream making dauphinoise potatoes. I also made a veggie festive puff pastry wreath with a cranberry and chutney sauce instead of gravy (this is much nicer than it sounds!)
Lemon cheesecake or chocolate Yule log for pudding. Lots of wine, talk and laughter round the table followed by a long walk (just avoided the rain) and snuggling up by the fire and candlelight. Last guests left a couple of hours ago - a great way to start the new year.
Tomorrow: let the healthy salad and soup commence!

We had a slow cooker chilli served with rice,grilled cheese potato skins,guacamole,coleslaw and salad.Was really nice,filling and warming.

Today i made the Dcs 'cheese omelettes' with salad and buttered toast.

The '' '' marks are because I mixed grated cheese with peeled and grated courgette. Anything to get some extra veg in.

DH and I had a sweet potato, blue cheese, mushroom, sage and courgette frittata with buttered toast.

It was all okay. tasty. Nourishing. But not terribly inspiring.

DS had homemade pizza (although shop-bought base) and I had his leftovers. It's a pretty common meal in our house, as he doesn't eat the crusts and I can't stand waste.

I love using a shop bought pizza,asda are especially good,then adding our own toppings and having with garlic bread and sides as a treat night that doesn't cost too much.

We had Caribbean spiced pork, coconut rice and pineapple salsa. It was fairly underwhelming unfortunately

Only if I am doing soups or a breakfast-style meal. Omelettes and fritattas are breakfast type foods for me.

Tonight the DCs put in a bid for the very good burgers at our local pub. So it will be that.
