What's for dinner?

I am on holiday so planning loads of nice meals, and more than one course which is really only a holiday or weekend thing for us.

Tonight we are having;

Salad with pear, walnuts and blue cheese

Chicken and rice soup with dill and lemon

apple crumble and custard

Hoping for some ideas from others which I can plan as well!

Frozen peperoni pizza with add your own toppings if we have them.Toppings included cherry tomatoes, red onion, lots of garlic, left over cold meat, anchovies, cheeseboard leftovers and olives. In fairness everyone topped their own and lots of leftovers were used up.

Ooh my thread was resurrected!

Tonight we had chicken ramen.

Tomorrow we will have slow cooker ham with baked potatos and sour cream and whatever other veg is left over. (aka brussel sprouts).

I am also drinking the leftover red wine from boxing day. Anything to help.

We are stuck on Venison. Venison meatballs with creamy mash, kimchi (I know) and a shredded carrot, tomato, etc salad. I don’t know, it’s very weird but I’m loving it right now.
I love pear and walnut salads, oh my. I may be inspired to move on from the venison rut. (Arf)

I have started eating kimchi and pickled ginger as a side dish several times a week. No matter what the main dish is. Because of the lovely fermented qualities and taste and also because DS1 is obsessed with japanese and Korean youtube videos. They go with suprisingly alot of 'western' style foods including stews IMO.

I had a big salmon, tomato, spinach and cannellini bean salad with lemon and dill dressing, it was really refreshing after all the Christmas excess.

We had a sausage slow cooker meal. Delicious and really enjoying the cooking being done early doors and we can eat once we are hungry :)

We're having carbonara

I've just cooked some Pillsbury dough cinnamon rolls and some homemade orange and cranberry muffins

Also down a traditional ham and cheese quiche for tomorrow lunch (yes, we have leftover ham)

Tonight was quickest dinner I could put together as I was so busy. Cheese omelette and salad. And a glass of red wine and some (not homemade) tiramisu from the freezer.

We had sticky lemon chicken from the latest good food magazine. First proper meal I've cooked in ages; it was really tasty but needed more veg.

Quality street for dessert.

We have a part-baked baguette, so we'll be having that with pate and cheese for lunch. I've also just eviscerated the fridge and found some mushrooms that need using up, so I've sent DH to the shops for some chicken thighs to make a casserole.

Not sure what I'm doing the rest of the day yet - probably cleaning and tidying.

Tonight I have changed the planned baked potatos with our slow roasted ham for roasted potatos. Plus doing cabbage with butter and caraway seeds. I have a solitary parsnip so will cook that with carrots, honey and mustard. The brussels - well it does not 'go' but I am planning my favourite .... and as no-one else in the family eats them I can do what i want. I lightly cook the brussels, toss them in olive oil and lemon juice, then add crumbled feta and mint. The others will have peas as their green vegetables.

I am trying to get more adventurous with using spices and herbs. I have become used to very plain cooking as DS1 has food issues. But he is now slowly branching out so i am pumping up the flavours.

I found an incredible roast potato recipe just before Christmas. In your oven dish mix smoked paprika, garlic granules and oil, top with an ungodly amount of grated parmesan, cut criss cross lines into halved potatoes and lay into the mix cut side down. Drizzle oil and seasoning over the top and roast! Crispy chewy cheesy roast potatoes 🤤

Tuscan chicken with tomato, spinach and cream sauce with some baby roast potatoes. Was delicious.

I forgot to say way back when this was posted that I tried this recipe and it was incredible. I have made it a couple of times since. I grated some parmesan in it as well last time and it was really good.

I am making my way through Christmas chocolates as well. I usually don't (because I am not a big fan of chocolate) and so they go stale. This year I am dedicated to the cause.

@WhamBamThankU I did your roasted potatos last night! They were a VERY big hit! So thank you as now I think I have found my new go-to roast potato!

Tonight the DCs are agitating for fish and chips. Our fish shop does plain salmon and salad bowls which are very nice and as I am recently diagnosed Coeliac (they also do gluten free on Sundays) I am going to have that.

This year my personal aim is to very seriously up my fruit and vegetable consumption.

I am giving myself and the rest of the family,free licence today to hoover up what remains from the festive period in the form of sweets,chocolate,cheese,biscuits etc in preparation for a somewhat healthier New Year. We'll probably do something quite easy later like homemade pizzas or tacos and will wash them down with hopefully the last bottles of beer before Dry Jan.

Tonight steak pie (hogmanay), savoy cabbage and leeks, and mash
Tomorrow baked camembert with gherkins, salad, crudités, olives, bread and salami

I was going to buy salmon today and gave the lamb biryani last night but both of the teens decided to eat out last night and the lamb needs eating up.
