If your visiting a different country -

Are you a culture type person of a country and seeing how other country's work ie visiting supermarkets, local cafes, shops, markets ect

Or

Do you prefer to see the history of a place and what attracts tourists there what it is known for ect

A bit of both. We’ve recently moved countries, so where I can I use a new supermarket each week until I’ve tried all the chains etc.

I've got sore legs from this holiday trying to cram too much in so I'll definitely book a longer trip next year. I need rest breaks in between the days out to recover, I'm no longer a spring chicken!

I really wouldn’t want to go to a supermarket or even usually markets (either locals who can fend for themselves, are quick, and also socialising or the market is a tourist staged parody)

No markets, no supermarkets, shopping doesn’t appeal either. Especially if it’s just one day - which I wouldn’t really enjoy anyway. I like slow pace on holidays that aren’t activity based holidays.

But if I would have to do just one day then I would pick one place /area / site to visit and take that in or try to do a specific recommended walk.

I do both, although I do get the distinction you're trying to make.
Primarily I'm interested in the everyday life and modern culture of a country, I tend to visit more unusual countries and would find a walk around the local supermarket more interesting than a walk around an ancient monument.
On a cruise all you can is a quick flit to the big sights seeing as your usually in port for 5 or 6 hours. I don't think people that cruise are going to see a count, that's a nice trip off the boat but it's more about the cruise experience than the ports.

I can’t imagine someone not doing both & people looking at sights do require food & water.
Historical sights would also be part of a country’s culture.
Im not sure why anyone would go abroad & only visit a supermarket & think they understood the culture of a country.

im not sure you can really understand the culture of a country in 1 day but a mix of a&e means you can learn about it.

Adding cruise into the equation changes everything.

Unless you have an overnight stop it’s a lightning visit overshadowed by the fear of not getting back in time.

Both but mostly A. It's more real. Just wandering the streets, taking public transport, seeing the architecture, soaking up the atmosphere etc. Tourist attractions are a commercial thing often not reflective of the culture at all and half the time people are not sure why they are even visiting. I became very cynical after wasting a half day in Copenhagen to see the 'Little Mermaid'!

Love the supermarkets. But we camp and self cater. I just adore French supermarkets - so much choice.

I always wonder what they think of our supermarkets.

The posited "cultural immersion" theory doesn't make any sense to me.

Locals go to work, pay the bills, complain about the politicians, get stuck in traffic every day, have to choose a school. Visiting a supermarket, walking around randomly, "enjoying" the city, isn't how locals experience the place, anyway.
