What’s for dinner?

So bored of this! Dh usually takes care of all cooking and most of the dinner shopping but he’s incapacitated at the moment and it’s on me. And I hate cooking so much 😂
Inspire me, what’s gracing your dinner table tonight?

Halloumi wraps here

I made a lovely mushroom velouté. my previous attempts at mushroom soup weren't too good, this was lovely.

TheChosenTwo · 06/10/2023 22:37

Tonight I did garlic and lemon salmon fillets with cavalo nero and some mange tout (both needed using up) with potatoes.
Cooking will be the death of me and dh needs to be fixed soon, already dreading tomorrow night 😂

There's a farmers market on near us today so I'm hoping to pick up some lovely cheeses, quiches, breads etc for a lovely carpet picnic later in front of the gogglebox.Love a good farmers market.

I've just got in my from my evening job with loads of garlic bulbs plus some loose red peppers, shiitake mushrooms and some roots/bulbs? of ginger which were all freebies,so hopefully will use some as part of something moderately healthy for a Friday night tea tomorrow.

It has rained for the whole day and is really dark and depressing so I think I will do something like a nice colourful paella to cheer us up a bit.

Gousto. The kids choose 2 meals each a week, one of which has to be a 10-minute meal. Has completely eliminated food waste in our house, everyone cooks together and the kids don't complain because they chose the recipes. A meal for 4 does 3 adults, 2 kids and a lunch for tomorrow usually, especially if I do some peas or something on the side

ElizaWinter · 13/10/2023 20:39

Roast chicken breast, stuffing balls, roast spuds etc. It was fab, easy and feels like winter is creeping in!

Chicken and lentil stew. Already made so just needs heating up 👍

Recipe please? I can’t quite master the different cooking times and end up with over cooked dry lentils…

Tonight was steaks with homemade chips, carrots, peas, green beans.

Sweet potato brownies for dessert.

Crepesandconans · 13/10/2023 20:43

Winter is not so much creeping in here, but in full effect already 💦💨

Esgaroth · 13/10/2023 21:15

@7Worfs I always used canned lentils which makes it much easier as they are always perfectly soft and never dry. I know they are more expensive than dried, but still very cheap really. Otherwise it's barely a recipe but this is basically what I do:

  1. Chop onion, leek, celery, carrot and garlic.
  1. Fry a bit in oil and butter.
  1. Add chicken (usually legs and thighs on the bone) and fry a little in the vegetables.
  1. Cover with chicken stock and tip in one can of brown lentils. Put in some red lentils or diced potato to make it thicker if you like. I also often add diced swede.
  1. Add black pepper, salt, and herbs to taste (I do tarragon because it's my favourite).
  1. Simmer for about 30-40 minutes. Remove chicken bits, cut meat off bone and return meat to stew.
  1. Serve with nice buttered bread or garlic bread or on its own.

Pan fried fillet of plaice with a mushroom, cream and lemon zest sauce, with veg. The veg takes longest, the plaice about 4 minutes.
