Anyone up for a menu challenge?

Need a main course for five people, preferably something that doesn't take too much faffing or can be made in advance.

One person is vegetarian and is allergic to mushrooms
One person doesn't like melted cheese (but cheese cooked in a flan is fine)
One person is a fussy plain eater, so obvious easy options like curry and chilli are out.

I could do something separate for the vegetarian, but would be nice if I didn't have to.

Things that I am considering:

Homity pie - quite fancy trying this, but would prefer something a bit healthier if possible.
Vegetarian cottage pie type thing with lentils and veg (Jamie's Allotment Pie without mushrooms) - do wonder if the fussy one will not be keen on this if she clocks the lentils.
Vegetarian lasagne, but melted cheese ...
My standard option of salad, jackets, various bits that people can pick and choose from to suit all.

So, things there I could happily do, but none of them quite floating my boat, so thought I'd open it up to other ideas.

Sausage casserole? And use Quorn sausages. You can then do sides of potatoes, veg etc.

Burgers? Everyone picks their own toppings, veggie burger included etc.

I’d go fajitas or tacos (or both?) easy for everyone to pick the bits they like and leave what they don’t.

I’d do vegetable tarts. Made this for my family the other day.

So puff pastry, cut into squares, roll edges in slightly then put in watered down tomato purée (easier to spread this way) and veggies like courgette, pepper and red onion. I topped mine with feta cheese as well.

Then I served with a salad and new potatoes with parsley. All very easy to do and you can make the tarts the day before.

@Sarvanga38 Richmond vegetarian sausages are great. beyond meat ones are pretty good too

I would find Richmond sausages or Beyond Meat awful, they are for people who like meat which is only some vegetarians.

Right, I am going to go with either a sausage casserole/traybake or homity pie/nice cheese & veg tart, depending on how weather is nearer the time.

Thank you all, it really was useful even if it felt like I was blocking every suggestion. If nothing else, it confirmed that there was nothing obvious I was missing in my quest to be bloody SuperHost instead of just doing something easy.😆
