Anyone up for a menu challenge?

Need a main course for five people, preferably something that doesn't take too much faffing or can be made in advance.

One person is vegetarian and is allergic to mushrooms
One person doesn't like melted cheese (but cheese cooked in a flan is fine)
One person is a fussy plain eater, so obvious easy options like curry and chilli are out.

I could do something separate for the vegetarian, but would be nice if I didn't have to.

Things that I am considering:

Homity pie - quite fancy trying this, but would prefer something a bit healthier if possible.
Vegetarian cottage pie type thing with lentils and veg (Jamie's Allotment Pie without mushrooms) - do wonder if the fussy one will not be keen on this if she clocks the lentils.
Vegetarian lasagne, but melted cheese ...
My standard option of salad, jackets, various bits that people can pick and choose from to suit all.

So, things there I could happily do, but none of them quite floating my boat, so thought I'd open it up to other ideas.

I think maybe sausage tray bakes winning so far. I could feed any two of them very easily, it's just the combo of the three that is difficult.

This is entirely me making it difficult. They will all eat what they're given and be grateful, and I do have things that I always feed the group that I could do - I just fancied finding something different, and preferably something that all could eat.

(Forgot to say, 'doesn't like melted cheese' also isn't a fan of pasta😂, or I might just have done a nice pasta bake of some sort - although again she'd eat it and be happy to be fed.)

So - next question - what are the best vegetarian sausages?

Something spinach and ricotta based could work, not spicy for the fussy eater, relatively healthy and also vegetarian. E.g. spinach and ricotta filo parcels with roasted vegetables. Maybe additional meat parcels for the meat eaters?

Or a really good anti pasti grazing platter!!

Either that or a good Veggie Red Thai Curry or Massaman (you could do prawns separate for those who eat them) and a nice big fresh crunchy mango and peanut salad on the side with loads of herbs and

vegetarian sausages are pretty shitty ime.

I do like some fake meats and substitutes but the sausages… eh.

I used to be vegetarian (and vegan, for some time).

tapas, mezze, fajitas (especially with beans!!) would have made me very happy. Potatoe wedges and salad (as pp suggested) are also lovely and versatile.

spanakopita is gorgeous, btw.

LM Lincolnshire veg sausages are the nicest
cook them in the oven , quarter them and add them to fried off onions and smoked paprika and a tin of chopped tomatoes
then when you want to serve add cannoli beans
serve it with crusty bread

All the tacos, fajitas, tapas, mezze, Thai curry options sound great, but unfortunately the plain eater really won't do them. Quite a 'meat and two veg' eater, but I don't feed her often and as above she is the group aunty and will be pandered to to a fair degree.

I think sausage traybake or Homity pie going to be the way. Maybe a sausage casserole if weather on the chillier side, and hope the rest of it hides the drawbacks of the vegetarian sausages.😂 Recommendation for LM Lincolnshire ones noted.

This is really nice. I’m super lazy and buy the ready rolled pastry, and cook it in a lasagne dish rather than a round pie dish, so it is the right size for the pre rolled pastry sheet. It should be called courgette, cheese and onion quiche, as there’s lots of courgette in there. Nice hot or cold.

You could do pasta but serve it with a really good homecooked Italian tomato sauce, then let people help themselves to the broccoli, spinach, salmon or tuna, grated cheese and chilli flakes

Toad in the hole. Either everyone with veggie sausages or individual veggie one and others meat.

Roast potatoes, gravy and veg.

I would do chicken fajitas and veg ones. Easy to prepare. Everyone assembles themselves. That's just 2 frying pans on the table, jar of salsa, jar of guacamole, bowl of sour cream , bowl of grated cheese

How about a leek or asparagus flan, with buttery new potatoes, green beans with toasted almonds and a homemade coleslaw. And warm choc brownies with ice-cream for pud. Yum!

There can't be spice so fajitas are a no-go.

Veggie sausages are not great when you think of all the things that are out there that are far nicer.

So the plain eater will simply take some of the meat and the veg (and the potato slices that a pp suggested) and NOT put them on a fajita.

fajita toppings (whichever they like, e.g corn, meat) and potato wedges still make a filling meal. No?
